Chicken Alfredo Pizza

Reviewed: May 19, 2002
I was searching for something quick and different to fix with chicken breasts and came across this recipe. I was under a big time constraint, so I took some shortcuts by using a prepared alfredo sauce (already in my cabinet), and then I grilled the chicken breasts using the George Foreman grill to expedite things. Even though you don't let the dough rise in this recipe, it still made a nice crust. The combination of the rosemary and thyme seasonings (along with the green onions and mushrooms I added) gave this pizza a "gourmet feel," and it really impressed my family, who came home & thought that I had bought it from Papa Murphy's! Thanks for a great recipe!

Spinach Quiche

Reviewed: Dec. 26, 2004
I'm not a big "egg" dish person, but I tried this recipe for a family breakfast at Christmas, and it was wonderful! I didn't have any feta on hand, so I substituted gruyere that I had in the freezer, along with the cheddar cheese. I cut back on the butter by a couple of tablespoons and used a traditional quiche/tart pan for baking. The presentation was beautiful, and it tasted even better the next morning. I'll be adding this recipe to my favorites. Thanks, Bailey!

Basic Crepes

Reviewed: Sep. 1, 2007
I used this recipe to make crepes for the very first time in my life, and it was wonderful and easy. Other recipes I've seen (like on FoodNetwork) call for you to put ingredients in a blender and "pulse for 10 seconds." I'm not going to get out the blender and have to clean all the parts for 10 seconds of preparation! ha ha Anyway, I didn't have regular milk on hand, so I used half and half. The only thing I added to the batter was 2 tablespoons of sugar and a teaspoon of vanilla to complement the sweet filling I was going to use. If I were to use a savory filling, such as meat or cheese, I would have used the recipe just as is. Thanks for making my first experience with crepes a painless one! I will be posting a photo as well.

Red Velvet Pancakes with Cream Cheese Glaze

Reviewed: Jun. 15, 2013
First time trying these was today (6/15/13). With the first 3 to go in the skillet, I used BUTTER to coat the pan and apparently had the burner too high, so they burned a bit. LOL With the second round of pancakes (the next 3), I used a bit of oil in the skillet INSTEAD of the butter and turned the heat down to just a hair below Medium High. They came out much better! I put the cream cheese glaze in a squeeze bottle, which made it easier to put in between the layers, in non-messy fashion. My kid loved them! Will make again. :-)

Authentic Pad Thai

Reviewed: Jun. 22, 2013
I made this for the first time today. I went to 3 different stores, trying to find tamarind PASTE." I finally went to a local International Foods store and asked the counter person what this was, and she handed me a pack of "Wet Tamarind," which was not totally smooth (had some pulp of some sort), so I figured I'd just strain it after boiling it with the sugar and vinegar. Next time, I would probably double the tamarind mixture, as my noodles seems to soak it up and came out a wee bit chewy/dry. The plate appeal is very plain in and of itself, so if you're serving it to others, you might want add some of the garnishes suggested in the recipe. Nevertheless, it was tasty and it passed my kid's picky tastebuds (LOL), so we have a winner. I added photos... :-)

Peach and Cream Cheese Torte

Reviewed: Jul. 15, 2013
I used about 2 big, fresh peaches for this recipe. It was relatively easy to make, but not especially "pretty" to photograph (smile). I also wasn't sure from the recipe if I should serve it room temp or chilled. (?) Overall, I loved the blend of flavors, along with the shortbread-type pecan crust. If I make it again, I would probably reserve a layer of peaches to lay across the top, so that the presentation was a little nicer on the eyes. :-)

Garlic Cheddar Chicken

Reviewed: Nov. 17, 2013
My 13 year old is a chicken breast fanatic, so I'm always looking for new ways to cook them. This was easy, tasty, and used ingredients that I always have on-hand anyway! I used a heaping teaspoon of Italian seasoning instead of just the oregano, and I only had dried parmesan cheese, but these were my only substitutions. 30 minutes in the oven was the perfect amount of time. They were flavorful and moist with a crunchy layer on top. I lined my pan with parchment paper for an easy cleanup. Will make again. Thank you. ;-)
