Simple Deviled Eggs

Reviewed: Jun. 28, 2012
A much easier version of devjled eggs is to eliminate the chopping altogether and add the mayo, mustard if you like and a couple of heaping Tbs of sweet pickle relish. If you like chopped onion, add it to the yolk mixture. Sprinkle paprika on top of finished eggs. For a variation, I use hot paprika.

Fresh Orange Juice

Valencias are best. Navels taste flat. Most grocery stores in my area don't get Valencias. I buy private label Valencia fresh squeezed at Meijer's in Indiana. Best dairy case juice on the market. We used to entertain the founder of Tropicana at our home at Derby time in Louisville.

Microwave in husk for 8 minutes. Move to cutting board and cut the ear across at the thickest point. Lift ear by silks end and shake ear out gently. Voila! No silks to strip!!

Kentucky Hot Brown

Omit the mushrooms. Pep Farm white makes better toast for this. Cheddar cheese sauce with a kick of Worcestershire sauce Rotisserie chicken breast can be used in lieu of turkey. If you use tomato slices put them on top of the turkey not on the toast.

Pesto Cream Sauce

Reviewed: Sep. 7, 2011
Great recipe. To lower the saltiness I substituted Gruyere cheese for part of the Romano cheese. Crab meat or lobster meat could be substituted for the shrimp. I suppose the fake products could also be used.

Cole Slaw

Reviewed: Jun. 27, 2012
I found it too sweet and halve the sugar. Also add good shaking of celery seed. This should cure overnight to allow celery seed to flavoe. I make the dressing separately in a piny jar and use on store bought packages of Cole slaw.

Risky way to use $12.00 worth of sardines if they're King Oscar 2 layer Brisling in olive oil. Recipe just says "sardines". Please define which type and what they're packed in. Single layer? There are a lot of cheap brands on the market, usually from the Orient.
