About this Cook
I now live in an apartment complex that frowns on outdoor grills. My son, who lives in a home has taken over the grilling and he is excellent.
My favorite things to cook
Chicken, beef, City Chicken, Stews.
My favorite family cooking traditions
My mom and grandma were traditional Southern style cooks. Simplicity was the byword, with taste being paramount. Country ham was used for flavoring vegetables. Ky Derby specialties were my mom's trademark.
My cooking triumphs
Senegalese chicken. If I were on death row, I would want it as my last meal, accompanied by Bibb lettuce, tomato and avocado salad topped with my mother's French dressing. Broiled butter topped French Bread slices.
My cooking tragedies
I try to discern beforehand what will work or not. I love lamb chops, but my broiling method leaves them tough.

Pesto Cream Sauce
Great recipe. To lower the saltiness I substituted Gruyere cheese for part of the Romano cheese. Crab meat or lobster meat could be substituted for the shrimp. I suppose the fake products could also be used.

Kentucky Hot Brown
Omit the mushrooms. Pep Farm white makes better toast for this. Cheddar cheese sauce with a kick of Worcestershire sauce Rotisserie chicken breast can be used in lieu of turkey. If you use tomato slices put them on top of the turkey not on the toast.

Glazed Chicken Wings
I ADDED 1/4 CUP FRANKS RED HOT SAUCE TO SPICE THEM UP. I LIKE THE SPICY SWEET COMBINATION. I ALSO LIKE NO BREADING THAT IS PREVALENT IN OTHER WING RECIPES.
