In a pinch - such a cinch!

Last night, in a moment of panic I came to the sickening realization that I hadn't been shopping, I had very little fresh veggies AND I had a hungry husband coming home in about 40 minutes.  This moment of "ZOMG" actually turned out to be the catalyst for an amazing recipe!  

Ingredients:
Dried Mushrooms
Pasta (Any Kind)
4Tbs Butter
1 cup white wine
Fresh Thyme
Fresh Parsley
Garlic Powder (to taste)
Chicken Stock (about 3/4 cup)
Corn Starch (1tsp)

I started with steaming the mushrooms, making sure they were mostly soft and then set them aside. Next I melted the butter, added chicken stock and then wine and let it reduce a little bit. I added the mushrooms, a little more wine, and some fresh thyme and let it continue to reduce, adding garlic and a bit of corn starch to make it a bit thicker and creamier.

I set the noodles to boil, strained them, and put them back in their pot. Once the sauce was finished (about 15 min total) I poured and tossed it all together, placing it on a pasta platter and sprinkling fresh parsley over the top.

It was DELICIOUS!!! 

Also managed to steam some broccoli and have it on the side.

OM NOM!!!
