Brunch for the Holidays

It’s been a while since I’ve written. I suppose time gets away from us all. With the Christmas season upon us, I find myself cooking more for larger groups. This week we had an office Christmas brunch for our group and I decided to try
an old favorite, Sausage and Egg Casserole. It’s an easy recipe that I was able to prepare the night before. That made it real easy to get up a bit early and pop it in the oven. The original recipe called for 9 large eggs but I never really know what “large”
eggs are so I just used 12. It worked out great. Over this holiday season, if you want to try out a new breakfast dish, give this one a whirl.
