Chocolate Buttercream

Reviewed: Jun. 24, 2011
Im only giving it 4 stars because i made changes after reading other reviews- It came out beautifully and spread very well even smoothed out nice to give me the crisp clean lines like a reg buttercream -used 1c. crisco & 1c. butter instead of 2c.butter -added 2 tbsp cocoa powder to the sugar -omitted eggs & added 4 tbsp of cold milk in place.

No Fry Crab Rangoon

Reviewed: Apr. 26, 2011
this a great, quick way to make these at home. the filling will keep for a day or two in the fridge and my husband loves them enough that I make a full batch for him to snack on a couple nights in a row. The changes I made are to spray them with a bit of cooking spray before oven. and if I want the wrappers to be crispier I will use mini muffin tins to place the wrappers in, lightly spray with cooking spray, oven for a couple minutes, then fill and return to oven to finish baking. the filling is visible this way but they are crispier

Spicy Rapid Roast Chicken

Reviewed: Apr. 26, 2011
great and quick way to do chicken. I actually did 2 large chickens in my roasting pan with this recipe... came out beautifully. once I pulled all the chicken off and froze in portions for quick meals during week. I used the carcass to make chicken stock which freezes well also to be used in rice, mashed potatoes etc. the only down side is it made a mess in my oven due to splattering... but the oven needed a cleaning anyways lol

Weeknight Pork Chops

Reviewed: Apr. 26, 2011
Absolutely Yummy! according to my picky 10 year old. I took advice from other reviews to double sauce and to pour it on while pork chops were cooking in the pan. The only change I will make next time is stepping down the vinegar some. maybe 3 TBS versus 4. *also I used homemade strawberry jam that had seeds- but when you live in the strawberry capital, you make your own! lol
