Wanda's Chicken Noodle Bake

My family loves this. I use fresh carrots, sliced thin, and they come out very soft during cooking time.

Ultimate Twice Baked Potatoes

These really are the ultimate. My skins fell apart, so I just baked them in a dish in the oven. I cut the sour cream in half and made up for it with cream cheese. I also used all light ingredients (except the bacon!) and they turned out great.

Roast Sticky Chicken-Rotisserie Style

This was a big hit with the whole family. I doubled the spices, otherwise there wouldn't have been enough for both chickens. I used the second chicken to make chicken salad. Yummy!

Grilled Marinated Shrimp

Everyone loved this! I substituted about 1/4 cup of BBQ sauce for the tomato paste which gave it a sweet/spicy kick. I got frozen uncooked peeled shrimp from Trader Joe's, thawed and marinated it. This will be a regular fixture in our house!

Classic Bran Muffins

I make these muffins every week. They're so versatile! I add different dried fruits that I pick up at Trader Joe's. I've used dried cherries, apples, and peaches so far. Instead of wheat bran, I've substituted oat bran and I also use whole wheat flour and Splenda brown sugar (1/2 cup).

Slow Cooker Chicken Taco Soup

Definitely a hit! I used frozen chicken breasts and added a can of black beans. Instead of whole tomatoes, I bought crushed tomatoes which seemed to have the perfect texture. I might even double the tomatoes next time. Also, if you live near a Trader Joe's, I highly recommend using their bottled enchilada sauce. Everyone in the family loved it, including my 10 and 4 year old boys.

Spinach Brownies

This recipe got major points from my husband and two sons. They all told me that they definitely wanted me to make this again! I didn't have mozzarella, so used a low fat cheddar instead and it came out great, other than that, I followed the recipe to a t.

Rich and Creamy Tomato Basil Soup

It was our first "fall" day in L.A. and my husband was in the mood for tomato soup and a grilled cheese sandwich. I had no cans of soup, but happened to have some fresh organic basil and heavy cream. I had no fresh tomatoes, so combed the cupboard for diced tomatoes. I used half diced roasted and half regular tomatoes. The juice inside replaced the tomato juice, which I also was out of. I pureed the ingredients and it turned out fantastic. Thanks!

There's kind of no way to mess this up. Use the freshest best fruit available (add in anything seasonal), and serve. People beg me to make this whenever I have or come to a party!
