Slow Cooker Stuffing

It was okay. The cooking time was way over for my slow cooker. I have a Cuisinart and it was pretty much done on low after an hour or so. The stuffing got really dark and wasn't very flavorful.

Persimmon Cookies

My mother-in-law used to make persimmon cookies during the holidays and we couldn't find the recipe. My husband thought these were delicious and gobbled them up. They were equally good when I substituted whole wheat flour and used Splenda for baking.

Ultimate Twice Baked Potatoes

These really are the ultimate. My skins fell apart, so I just baked them in a dish in the oven. I cut the sour cream in half and made up for it with cream cheese. I also used all light ingredients (except the bacon!) and they turned out great.

Stuffed Pattypan Squash

This was incredible. Everyone in the family loved it. One thing though. Next time I don't think I'll saute the onion in the bacon drippings but olive or some other unsaturated oil instead. I don't think that would hurt the dish. My arteries are begging for mercy!

This was a big hit with the whole family. I doubled the spices, otherwise there wouldn't have been enough for both chickens. I used the second chicken to make chicken salad. Yummy!
