Baked Mashed Potatoes

These were amazing. I followed the recipe pretty closely. Forgot the milk, but that didn't seem to matter. I topped them with low fat cheddar cheese towards the end. They were great the next day too!

Mo-Mo Potatoes

These were a big hit. My boys were craving "Mojo Potatoes," an item offered at Shakey's Pizza in California. Instead of cutting the potatoes like fries, I cut them in round slices. I pan fried them until golden brown, then finished them off in the oven.

These were a big hit. My boys were craving "Mojo Potatoes," an item offered at Shakey's Pizza in California. Instead of cutting the potatoes like fries, I cut them in round slices. I pan fried them until golden brown, then finished them off in the oven.

Steak House Au Gratin Potatoes

These were very delicious and easy to make. Instead of all the heavy cream, I used 1/4 cup of Half and Half and 1/2 cup of 1% milk. I also used low fat shredded cheese--a colby jack mix. They still tasted very creamy and cheesy!

White Chili with Ground Turkey

This perfectly hit the spot. I am a bean lover and, although I cut the recipe in half, I still used 3 cans of beans. I also substituted vegetable broth for the chicken broth and it came out great. Really satisfying, and full of flavor!

There's kind of no way to mess this up. Use the freshest best fruit available (add in anything seasonal), and serve. People beg me to make this whenever I have or come to a party!

Three Cheese Garlic Scalloped Potatoes

This was decadent and delicious. You can substitute whatever cheese you want and if it's too heavy on the fat, use low fat cheese and fat free half and half. I did and it was still terrific.

Rich and Creamy Tomato Basil Soup

It was our first "fall" day in L.A. and my husband was in the mood for tomato soup and a grilled cheese sandwich. I had no cans of soup, but happened to have some fresh organic basil and heavy cream. I had no fresh tomatoes, so combed the cupboard for diced tomatoes. I used half diced roasted and half regular tomatoes. The juice inside replaced the tomato juice, which I also was out of. I pureed the ingredients and it turned out fantastic. Thanks!

Spinach Brownies

This recipe got major points from my husband and two sons. They all told me that they definitely wanted me to make this again! I didn't have mozzarella, so used a low fat cheddar instead and it came out great, other than that, I followed the recipe to a t.

Blueberry Pie

I made the pie exactly as written except I used 5 Tbs of corn starch as suggested. It was so runny that after cutting one piece, the area filled with liquid, even though the pie had cooled. I sopped up the excess liquid and what was left tasted really good.

Ranch Dressing II

I'm giving this a 4 as is, but really with the changes everyone suggested I'd give it a 5. Instead of the mayo/sour cream proportion, I used 1/3 cup light mayo, 1/3 cup light sour cream and 2/3 cup low fat buttermilk. I also doubled the spices and used fresh chives.

Slow Cooker Chicken Taco Soup

Definitely a hit! I used frozen chicken breasts and added a can of black beans. Instead of whole tomatoes, I bought crushed tomatoes which seemed to have the perfect texture. I might even double the tomatoes next time. Also, if you live near a Trader Joe's, I highly recommend using their bottled enchilada sauce. Everyone in the family loved it, including my 10 and 4 year old boys.

Classic Bran Muffins

I make these muffins every week. They're so versatile! I add different dried fruits that I pick up at Trader Joe's. I've used dried cherries, apples, and peaches so far. Instead of wheat bran, I've substituted oat bran and I also use whole wheat flour and Splenda brown sugar (1/2 cup).

Grilled Marinated Shrimp

Everyone loved this! I substituted about 1/4 cup of BBQ sauce for the tomato paste which gave it a sweet/spicy kick. I got frozen uncooked peeled shrimp from Trader Joe's, thawed and marinated it. This will be a regular fixture in our house!

Roast Sticky Chicken-Rotisserie Style

This was a big hit with the whole family. I doubled the spices, otherwise there wouldn't have been enough for both chickens. I used the second chicken to make chicken salad. Yummy!
