Baked Oatmeal II
I have been making a modified version of this recipe for years. I only bake it 30 minutes at 350 degrees in an 8 x 8 pan. I use 1/2 cup of sugar and one egg. I sometimes add an extra 1/2 cup of milk or plain yogurt. My family loves it. Also, I add whatever fruit is on hand -- fresh, dry, or canned. I also replace the butter with oil.

Lebanese-Style Red Lentil Soup
Red lentil soup is awesome. If you haven't had it, try it. Omit the cayenne though. You might want to add a bit more cumin. I also omitted cilantro (imo, it tastes like soap). I used vegetable broth in order to make this vegetarian. Also, if you cook this a little longer, pureeing the soup is unnecessary -- red lentils will quickly dissolve on their own with no assistance.

Blueberry Gingerbread
Good, moist bread. I used chopped fresh apples instead of blueberries. It was good. After I curdled my milk w/vinegar, I added it to all the wet ingredients, made a well in the dry ingredients and mixed it all together (this saved a bit of time). The apples paired well with the gingerbread. I'd like to try it with two-thirds of the sugar and see how it turns out.
