Baked Teriyaki Chicken
I really liked this recipe. As a southern gal who frequents Houston often, I can be picky with my mexican food. I did a few things differently by adding 5 chili peppers, reducing to 2 anaheim peppers, 2 tomatillo and 2 jalapeno peppers. I used about 3 cups of beef broth rather than the beef bouillon and because I needed more liquid so as to eat like a soup. Lastly, I cut the cream cheese in half because DH is not a fan. Turned out delicious! Cant wait to cook again!

Pork Green Chile
DELICIOUS! Hubby and I thought this recipe was amazing. I did reduce make a few minor edits: I reduced the liquid by using a cup of water and a cup of beef broth. Additionally, I added a red sweet pepper, green onions and fresh parsley with a pinch of cumin, paprika and chili powder. Rather than eating this dish as a soup or chili, we topped our cheese enchilada's with it...ummm ummm. Oh and being from the south, I made potato salad as a side dish which perfectly complimented the dish. 5 stars! Thanks DEONNE1 for sharing.

Ground Beef Enchiladas
Simple and delicious! Considering my husband and travel alot and mexican is our favorite cuisine,we have ordered enchiladas from restuarants throughout the lower 48. This recipe ranks right up there in the top 10 in our book. Like others, I used sour cream instead of yogurt and added onions to the ground meat. Also, I traded queso cheese for the mozzarella. DELICIOUS! Will definetely cook them again.
