Crazy Cake
Need to find my other crazy cake recipe as this one needs some fine-tuning (the vinegar is NOT the issue, for those put off by the vinegar). 1) I will NEVER make a cake in a 9x13 pan again. Very hard to mix well/evenly and even stirring gently, I sent powder everywhere, creating a bigger mess than simply washing a separate bowl. 2) I used a high quality cocoa (AND replaced one cup of water with coffee as I always do with my chocolate cakes) and this still was barely chocolatey. Definitely needed more cocoa, although a moderate choc fan might have been satisfied. 3) This was not the fault of the recipe, but just a comment: My cake went from not done to nearly burnt very fast, so watch it closely the last five minutes. 4) Texture was good -- a wee bit oily, but probably needed that to come out of pan. Very moist & rose well. My biggest issue was the lack of chocolate taste and the one-bowl method.

Hearty Breakfast Muffins
Update: Apparently the first time I made these, by a complete fluke, I hit the proportions right. The second time -- ROYAL disaster. I would say that both the zucchini and carrots should be on the med/small side AND the carrot should definitely dictate the amount of zucchini. It can be hard to gauge if these are done even with a fork/toothpick. Mine came out clean, but are complete mush inside. Will continue to play with the recipe, as I know these can be delicious, but had my second experience been my first experience, I would never make these again. Original: Really yummy recipe base, but needs some minor tweaking, as my muffins lost their "bottoms" (!) to the tin despite very adequate greasing. Unlike others, I grated two carrots and then used that amount as the example for how much zucchini to grate (I had to sub some grated apple, as one zucchini was bad inside). Kept all other measurements the same & felt that the ratio of flour was normal. They are beautiful muffins -- look like something from a bakery. Appreciated hint to fill tins, as they do not rise very much. My tins were filled to the very top, but did not overflow (made exactly 12). Could probably reduce sugar to 1/3 cup if satisfied with a less sweet muffin. YUM all around!

Apple Banana Cupcakes
A really lovely flavor. I live abroad and could not get everything noted, so had to substitute oil for shortening (and used plain yogurt for the buttermilk). Because of personal preference, I upped the cinnamon and reduced the nutmeg. I shredded the apples (wish the amount of apples was stated in cups, as apples vary so much in size). I was worried that the banana would overpower, but it did not. They were not pretty muffins, but tasted great. Please note: Halving the recipe gave me only 10 modest size muffins.
