Pecan Pie V

Delicious! Used splenda and only 3/4 cup of brown sugar to make this lower sugar for family members. Tasted great! Did take longer to bake than stated.

Red Lentil Curry

I really enjoy this recipe! I have made it multiple times. It has an excellent curry flavor and I love the red lentils in it. I plan to make it for a family gathering for soy free, gluten free, dairy free, vegetarian family members.

Chocolate Eclair Dessert

I enjoyed this quick to make dessert. We did make a few changes and did half sugar free vanilla pudding mix and half banana. I also sliced some bananas and added those into the pudding layers. I also added some vanilla extract into the pudding to make it taste more natural. Overall, not bad for such a quick dessert.

Cilantro Tabouli

I found this recipe after requesting the recipe from a family member after trying the recipe. I normally do not like Tabouli that much but loved this recipe and I think the reason was the substitution of cilantro for parsley. Overall this recipe tastes great and gets better when left in the fridge.

Icebox Sugar Cookies

These cookies are so buttery and delicious! I made this recipe for Thanksgiving and also was able to freeze two of the three rolls and thaw and bake them later with still a great taste. I followed the recipe exactly, just letting the rolls thaw overnight if frozen.

Cranberry Crunch Squares

These were good and very easy to make. I put them together in only about 15 minutes. I used leftover cranberry sauce (2 cups) instead of a can of the stuff and used 1 1/2 stick of butter. I also put half the crumble on the bottom and half on top of the berries. I got a lot of compliments on this dish!

Pumpkin Pancakes

These pancakes are extremely fluffy and delicious! Even a two year old in our group enjoyed them. It was easy to put together the recipe. I doubled it and got about 20 pancakes.

Orzo and Tomato Salad with Feta Cheese

This salad was just okay. I did like the fresh herbs but still preferred other pasta salads I have made. I did not add olives since I dislike olives. We will not make this again.

Frozen Fruit Cups

These were quite good and easy to make. I followed the recipe except using splenda for sugar and using fresh raspberries instead of the cherries to make it more healthy. They stayed good for a long time after I popped them out of the muffin tin and kept them in a plastic bag. Then 15-20 min. before serving I put them out on the counter. Easy side dish!

Peanut Butter-Chocolate Banana Cream Pie

This dessert was a hit for my husband and mother in law's combined birthdays! Everyone kept commenting how delicious it was. I followed the recipe except using sugar free banana pudding mix instead of vanilla to give it a more banana type flavor.

Tiramisu II

My husband greatly enjoyed this for his birthday cake! He always wanted tiramisu and thought this tasted better than in restaurants. I followed the directions, except adding sweetener to the cream/cheese mixture. I used splenda instead of white sugar.

Paul's Pumpkin Bars

I really have enjoyed this recipe! I have had many compliments on these bars and even a recipe request. They are moist and delicious. I did use 1/3 oil and 1/3 melted butter since I ran out of canola oil and a 9x13" pan which I baked for about 40 minutes since it was thicker. This recipe is a keeper!

Navratan Korma

This was a tasty recipe but did not taste like a traditional Indian korma that you would get in a restaurant. I followed the directions except did not saute the paneer since I enjoy the soft texture of it. My husband also commented that he enjoyed it but did not think it had the same taste of a regular korma.

Beef 'n' Biscuit Bake

My husband loved this dish but I thought it was just okay. We followed the directions but added more spices and subbed pinto for kidney beans and veggie crumbles instead of beef. My complaint was that the bottom of the biscuits seemed uncooked or mushy but the only way to avoid that would probably be to cook them separately.

Gobi Aloo (Indian Style Cauliflower with Potatoes)

Usually I do not have much luck replicating the flavors I get in Indian restaurant dishes. This was the exception! It tasted authentic. The only problem I had with it is that the time in the recipe is not long enough to get the potatoes and cauliflower to cook thoroughly. I had to add time to it and as other reviewers mentioned additional water was necessary so the food would not bun. Next time I would cook or par cook the potatoes first.
