Hot German Potato Salad III

Sophie's Zucchini Bread

I almost died when I couldn't find my zucchini bread recipe. Well, good thing, this was even better. I cut the oil in half and added 1/2 cup of applesauce. My family can't get enough of it.

Blueberry Pie

This pie was so awesome. I used fresh picked berries, five cups, upped the cornstarch to 5TB. It was just runny enough to make a nice sauce for my vanilla ice cream.

Singapore Noodles

This what exactly what I was looking for! I did replace with rice vermicelli noodles. The beauty of this recipe is that you can adjust based on what is on hand and the degree of spicyness desired

I have always found upside down cakes boring but my father-in-law loves them. This was such an AWESOME cake. I used Duncan Hines pineapple cake mix. The 8oz can of pineapple rings left me about 3 rings short, bought the 20oz. can the next time. Thank you for the recipe, it has become a new favorite for my family.

Carrot Cake III

I too had never made a carrot cake until I tried this. It is the best carrot cake I have ever had. My family flipped over it. Definitely advise on cutting the oil to 1/2 cup and using 3/4 cup of applesauce. I also cut the powdered sugar in half and it was fine.

Honey Coconut Salmon

This was absolutely fabulous. I could eat salmon every night if it was prepared this way. I did cut the butter to one cup to try and save some fat and it was still outstanding.

Scallop Scampi

Awesome recipe. I substituted minced clams in juice for the chicken broth, added shrimp also, and left the grated cheese out until the end. Followed others suggestions to cut the butter with olive oil and substitute scallions. It was the hit of the party.
