Love this recipe! It's easy & healthy and you can add whatever veggies or even meat that you'd like. I made it as written the first time, but added ham. Delish, but I agree with other reviewers that a whole pkg of spinach was too much & overpowered, so maybe use half. Making this now with sauteed onions, peppers mushrooms, some artichoke hearts & steamed broccoli...looks so colorful. Skipped the cheese this time. Also, add extra egg whites to stretch it further. Thanks for this very versatile recipe!
