Lap Salad

I like this recipe a lot and my girlfriends really enjoyed it but I did make a few djustments to it. I added a coarsely chopped green pepper and about a 1/4 cup of chopped red onion. I also added about 2-3 T. of soy sauce. Oh, and I always toast almonds and most other nuts.

Three-Cheese Spaghetti Bake

I made this recipe for a friend and her family. (She had just had surgery.) Her husband called and said he thought he would be sick next week! They loved it. I did add ground beef (about 1/2 pound)to the sauce and plan to try with Italian sausage too. I also added some chopped green peppers (1/2 pepper) and 1/2 cup chopped onion and used minced garlic instead of the garlic powder. All sauteed briefly just to soften a bit before adding to the sauce. Also added a small can of sliced black olives to the spaghetti. This made enough that I baked in two smaller casserole dishes. One for friend and one for family. Everyone loved it. Two teenage sons meant no left-overs but it makes a lot!

Luncheon Chicken Salad

Love, love, love this recipe. I only changed it a bit by adding a handful, maybe 1/3 cup of dried cranberries. I made it for a girls day at my pool and everyone raved and wanted to recipe. It was light and refreshing and the perfect main course for a luncheon!

Baked Cod with Roasted Red Pepper Horseradish Sauce

I had to substitute wasabi for the horseradish but the sauce for this dish was still delish!! I plan to use this sauce for other meats like a tenderloin.

Easy Chocolate Chip Pound Cake

Love, love , LOVE this cake. My very picky aunt really like it. I made the version using lemon pudding and dried blueberry juice-infused cranberries (couldn't find dried blueberries in my little town). It was moist and tender. I had to bake it a little longer and had a lttle trouble getting it out of the Bundt pan that I used but it was still pretty enough to put on a cake stand. It was the perfect ending to great Saturday evening meal.
