About this Cook
I am a married to my high school sweet heart for 28 years. We have 5 sons. Three are grown and married to three beautiful and sweet young women. One is in college and the baby is still in high school. I teach high school biology and my husband is a police officer. If I had my druthers though I would be a housewife and take care of him and my boys. I love Jesus and all that he has done for me.
My favorite things to cook
I enjoy cooking lots of things when I have time. I like to bake cakes. I really enjoy making jams and jellies and other preserves. I enjoy feeding my family so whatever they will enjoy is what I like to cook.
My favorite family cooking traditions
My mom's cornbread dressing balls (that I will never be able to replicate) My mother-in-laws ability to put together a meal out of almost nothing in almost no time!!! My grandmother's Parker House rolls. I'm sure even the originals weren't as good as hers. My great grandmothers' jam cake and rhubard pie.

Lap Salad
I like this recipe a lot and my girlfriends really enjoyed it but I did make a few djustments to it. I added a coarsely chopped green pepper and about a 1/4 cup of chopped red onion. I also added about 2-3 T. of soy sauce. Oh, and I always toast almonds and most other nuts.

Baked Cod with Roasted Red Pepper Horseradish Sauce
I had to substitute wasabi for the horseradish but the sauce for this dish was still delish!! I plan to use this sauce for other meats like a tenderloin.

Easy Chocolate Chip Pound Cake
Love, love , LOVE this cake. My very picky aunt really like it. I made the version using lemon pudding and dried blueberry juice-infused cranberries (couldn't find dried blueberries in my little town). It was moist and tender. I had to bake it a little longer and had a lttle trouble getting it out of the Bundt pan that I used but it was still pretty enough to put on a cake stand. It was the perfect ending to great Saturday evening meal.
