OREO Cookie Balls

These were the hit of my little one's 3rd birthday party! *First, since several attendees were gluten-free, I made this with Gluten Free sandwich cookies (Kinnikinnick K-Toos chocolate cookies - 2 packages of these equals 36 cookies exactly. I didn't cover with crushed cookie crumbs.). It worked beautifully - no issues. *Second, I followed other reviewers' advice and froze the balls before dipping (actually, they sat in the freezer overnight). *Third, after freezing, I inserted lollipop sticks and these made dipping in chocolate a breeze. I did spoon chocolate over the tops and merely dipped the bottoms to cover the entire cookie ball. This also made eating a little easier for little ones - less chocolate mess on the hands. :-) (We're in the middle of a typical, brutal Texas summer. These melt fast, so I served them straight from the 'fridge and the lolly sticks kept some of the mess in check.) I can't wait to make these again...and try different variations. :-)

Sweet Simmered Pork Chops

I've made this twice now and I'm giving it 4 stars as-is. When following the recipe as written, the pork chops are tasty but they are a soupy mess. There is no real sauce, so to speak. The natural juices mingled with the soda/barbecue sauce concoction and watered it down. However, when I made them a second time, I boiled the daylights out of the sauce in a saucepan for about 15-20 minutes (or so - just watch for it to thicken a bit), until it thickened. I then brushed some onto the chops and reserved the rest to pour on at the dinner table (I stuck it in a gravy boat and let my hubby and the kids pour on to their hearts' desire). Everyone agreed that doing it this was much better, the chops were more flavorful and the sauce is KILLER! Thanks for a good starting point. Will definitely make this again the amended way. :-)

Summer Garden Crustless Quiche

This is simply fantastic as-is with no substitutions or changes to the recipe (I'm notorious for tweaking things). The flavors complement each other nicely, it's chock full of veggies (nicely brightened by the addition of parsley) and the cheese flavor actually comes through. A definite keeper...and such a refreshing change from the glut of rubbery, bland, overpowered-by-crust quiche recipes out there. :-)

Hungarian Mushroom Soup

This is, hands down, the best cream-based soup I've eaten. It is hearty enough to work as a main dish with a side salad but light enough that one doesn't leave the table feeling bloated and in need of angioplasty (as happens with so many other heavy, salty, gloppy cream soups). The lemon and dill work wonders to lighten the dish while still allowing the creamy texture and earthy mushroom flavor to shine. I've made this twice now and it will continue to be in my regular recipe rotation. Bravo!

Cream Cheese Colcannon

This was absolutely fabulous! My Irish grandmother used to make colcannon and it really brought back great memories to eat this comforting dish. It did need a hefty dose of salt and I found that mine needed about 45 minutes in the oven to brown properly. Aside from those two little tweaks, I wouldn't change a thing.

Traditional Style Vegan Shepherd's Pie

I've made this a couple of times now and each time it's been great! The first time I made it as directed, only used instant mashed potatoes to save time. It was very good. The second time I still used the instant mashed potatoes but subbed in a can of garbanzo beans for the ground beef substitute. Also, after cooking the veggies, I deglazed the pan with about 1/2 cup of vegetable broth to make the veggies a bit more moist. It was FABULOUS! This is a great recipe because you can vary the ingredients to your liking. :D

Oven Scrambled Eggs

Really lovely - the eggs turned out quite fluffy and had a nice texture. The only change I'd make is to use less butter next time; however, these are otherwise fabulous and a GREAT go-to when you've got a crowd to feed!

No Cook Cranberry Salad

This was a nice change of pace. I happen to be a fan of whole berry cranberry sauce and enjoyed the added textures and flavors of the grapes, oranges, coconut and nuts. My husband agreed; however, my kids weren't sold. To each his own, I guess. :) Bottom line: If you tend to like tropical fruit salad and the general taste of cranberry sauce, you'll likely enjoy this. If you're not a huge fan of either, this might not be your thing.

BBQ Bacon Ranch Dip

I wasn't sure about the combination of cream cheese, bbq sauce and shredded cheese; however, after reading the rave reviews I made this for a New Year's party. Not only did I love it, it was a total HIT with everyone! This has been added to my rotation of "must-make" party snacks. :o)

Browned Brussels Sprouts with Orange and Walnuts

I love Brussels sprouts but I have to say that this is my all-time favorite recipe for them! The best flavor came from using a Tangelo in place of an orange--super sweet/tangy orange flavor! Also, since I don't usually keep walnut oil on hand, I just brown the sprouts in olive or canola oil and they turn out great. Fabulous recipe!!

Carrot Souffle

Really, truly fantastic! I cut the sugar down to 1/2 cup, pureed the carrot mixture in the food processor and sprinkled a small am't of cinnamon and nutmeg over the top when it came out of the oven. It came out fabulously well--light and airy, yet buttery sweet and delicious. I served it with coconut crusted chicken and the meal was superb.

Mediterranean Stuffed Chicken

I had high hopes for this recipe; however, the filling was rather bland and the overall taste of the dish was mediocre. None of the herb flavor came through--if I ever made this again, I'd probably use a bit more dill, along with fresh garlic and chopped onion.

My Chicken Milano

I ended up seasoning the chicken a bit more liberally than the recipe called for, using garlic powder, dried basil, oregano, salt and pepper. I also added a bit more of these seasonings to the finished dish as it simmered. Other than that, this dish was FANTASTIC! I served it with rice and my husband could not stop raving about how good it was.

Hunter Style Chicken

Really good--I added minced garlic and used 2/3 c. chicken stock and 1/2 c. wine. Turned out pretty good. I might omit the bacon next time, though.

I followed the advice of another rater and omitted the garlic and sour cream, added fresh cilantro and added a couple of Tbs. of milk to thin it out. A definite keeper! This goes really well with the chicken tikka masala recipe on this site.

Chicken Tikka Masala

Wow, really good! I didn't have cayenne, so I substituted red pepper flakes. I also used half the salt called for. Still turned out great. This goes very well with the raita recipe on this site.
