Marvelous Stuffed Mushrooms

Absolutely delicious! I omitted the dijon mustard (didn't have any on hand) and put in 1/2 tsp. minced garlic and they came out so tasty!

BBQ Bacon Ranch Dip

I wasn't sure about the combination of cream cheese, bbq sauce and shredded cheese; however, after reading the rave reviews I made this for a New Year's party. Not only did I love it, it was a total HIT with everyone! This has been added to my rotation of "must-make" party snacks. :o)

Browned Brussels Sprouts with Orange and Walnuts

I love Brussels sprouts but I have to say that this is my all-time favorite recipe for them! The best flavor came from using a Tangelo in place of an orange--super sweet/tangy orange flavor! Also, since I don't usually keep walnut oil on hand, I just brown the sprouts in olive or canola oil and they turn out great. Fabulous recipe!!

Carrot Souffle

Really, truly fantastic! I cut the sugar down to 1/2 cup, pureed the carrot mixture in the food processor and sprinkled a small am't of cinnamon and nutmeg over the top when it came out of the oven. It came out fabulously well--light and airy, yet buttery sweet and delicious. I served it with coconut crusted chicken and the meal was superb.

Mediterranean Stuffed Chicken

I had high hopes for this recipe; however, the filling was rather bland and the overall taste of the dish was mediocre. None of the herb flavor came through--if I ever made this again, I'd probably use a bit more dill, along with fresh garlic and chopped onion.

My Chicken Milano

I ended up seasoning the chicken a bit more liberally than the recipe called for, using garlic powder, dried basil, oregano, salt and pepper. I also added a bit more of these seasonings to the finished dish as it simmered. Other than that, this dish was FANTASTIC! I served it with rice and my husband could not stop raving about how good it was.

Really good--I added minced garlic and used 2/3 c. chicken stock and 1/2 c. wine. Turned out pretty good. I might omit the bacon next time, though.

I followed the advice of another rater and omitted the garlic and sour cream, added fresh cilantro and added a couple of Tbs. of milk to thin it out. A definite keeper! This goes really well with the chicken tikka masala recipe on this site.

Wow, really good! I didn't have cayenne, so I substituted red pepper flakes. I also used half the salt called for. Still turned out great. This goes very well with the raita recipe on this site.

Easy Summer Pie

I altered this a bit, but it was wonderful! I cheated and used a pre-made Nilla Wafer crust. Because I had tons of peaches and plums on hand, I simply sliced these thinly and used them on top. Great flavor, light and creamy! Oh, I also added a dash of vanilla to the cream cheese mixture for just a tad more flavor...

Baked Sesame Chicken

Really, really good. I altered this recipe a bit, though. I added 1 T. garlic and 1/2 T. sweet/sour sauce to the soy in the pan. I also dredged the chicken through plain flour, then dredged through 2 beaten eggs, then through the flour/sesame mixture given in the original recipe. The results were fabulous!

White Chocolate Raspberry Cheesecake

Wow--this was GREAT! I did make a few changes: instead of using a springform pan, I divided the batter between 2 ready made chocolate cookie crusts. Also, I substituted raspberry jam for the raspberry mixture (a real time saver!). My family RAVED about this and have already begged me to make it again!

BUSH'S® Zesty Black Bean Quesadillas With Cilantro Sour Cream

Really good--I used this recipe to make 4 quesadillas instead of 2 (held together better with less bean/salsa/cheese filling). Also, left out the feta/mozzarella mixture and subst. co-jack cheese, which tasted great. LOVED the cilantro sour cream, which also goes great with the taco bake recipe listed elsewhere on this site.

Taco Bake II

I modified this a bit: I omitted the can of tomatoes and substituted 3 small (fresh) chopped vine tomatoes, 1 small chopped onion, 2 Tbs. fresh chopped cilantro, 2 Tbs. fresh lime juice and 1 Tbs. red pepper flakes. I left all other ingredients the same. The dish came out really well and tasted delicious! I garnished it with sliced black olives, sliced avocado and tomato, along with cilantro sour cream (1 c. sour cream, 4 Tbs. fresh chopped cilantro, 2 Tbs. fresh lime juice, dash of salt). When served with the sour cream/fresh veggies, this dish wasn't so dry. :-)

Buttermilk Chocolate Cake with Fudge Icing

I really liked this recipe--however, I substituted Splenda for the sugar in the fudge icing--BIG MISTAKE!! Follow the recipe to the letter and don't use sugar substitute...you'll be pleased with the results!

Creamy Cucumber Dressing

Sixteenth Century Orange Chicken

All I can say is...WOW! I didn't have currants on hand, so I subst. raisins and subst. orange blossom water (available at most Arabic grocery stores) for rose water. My husband couldn't stop raving about this! A new favorite!
