Sweet Dinner Rolls

Made this for cabbage burgers. The recipe made enough for 16 burgers and was super simple with my Kitchen Aid. I put the water, milk, sugar, salt and butter in a small sauce pan and heated them on low just until the butter was melted. It took about 10 minutes. Then I cooled it in the refrigerator until it was slightly warm to the touch. This took about 15 minutes. Put the warm mixture in the KA bowl with the yeast and let it sit for 10 minutes. Added the egg and mixed with the dough hook on low until the egg was mostly incorporated. Added the flour and ran mixer on 2 for 6 minutes. Let it rise for 1 hour and then made my cabbage burgers. Delicious. My husband thinks it will make great hamburger and brat buns. Can't wait to try it. This is my go to bread recipe from now on!

Oven-Roasted Asparagus

Don't add the parmesean until the last 5 minutes or so, or else it sometimes burns. That said, this is our offical favorite asparagus recipe. Especially in the spring when we can pick wild asparagus. But it tastes delicious with store bought as well.

Watermelon and Tomato Salad

The first time I made this with fresh tomatoes and basil from my garden, watermellon from the store and no feta. My friends and family couldn't stop eating it! The second time I made it, I just used the watermellon and basil because I was out of tomatoes and feta. Equally delicious. The balsamic vinegar really does amazing things to the flavor of the watermellon!

Pork Medallions with Balsamic Vinegar and Capers

Restaurant quality. Delicious quick, and easy. This is a winner every time I make it. I always double the sauce because everyone likes to sop it up with bread! It is very rich, so go with lighter sides to balance it out.

Simple Basil Butter

I made this for a dinner party and everyone loved it. My husband ate it like ice cream!I used a cookie scoop to make individual pats that are the perfect size for a single serving.

Marinated Grilled Shrimp

This was wonderful on a recent camping trip. The cayenne pepper adds just the right flavor without excess heat. Even my boyfriend who is super heat sensitive loved it. I used ketchup instead of tomato sauce and fresh basil from my garden. We used frozen shrimp and butterflied them before we put them in the marinade. Definitely keep some aside for basting if you decide to butterfly the shrimp instead of skewering them. I can't wait to try this on chicken and fish. At the end of the growing season I'll be mixing up a huge batch of this and freezing it for the winter!

Potato Cake

My Dad used to make potato cakes, but until now I haven't had any for almost 30 years. I had some left over mashed potatoes, so I tried this recipe. It was fabulous! Instead of putting the cheese in the middle of the cakes, I mixed it in with the potatoes. The cook time (10 minutes per side over low heat) delivered a crisp outside. I also added garlic powder, onion powder and parsly. You can easily adapt this recipe to whatever flavors you and your family prefer. This recipe is definitely a keeper.
