Mediterranean Pasta with Greens

Very good recipe and very easy to throw together. I used Kale instead of chard, but this is a personal preference. I didn't cook the kale first in water. I just added it to the skillet with the Garlic, sun-dried tomatoes and kalamata olives. I added a little of the pasta cooking water and let the kale steam a bit. I also added a can of quartered artichoke hearts with the pasta. The flavor was excellent. Finished with a sprinkle of Pecorino Romano, Yummy!

Hash Brown and Egg Casserole

I made this for an office potluck. It was like by most all my co-workers. A couple of the ladies asked for the recipe. I made this with half a 30oz bag of shredded hash brown potatoes, 8 very large eggs, half and half, colby jack cheese. This dish had a very good taste. I didn't add the onion or garlic powder. It seemed too much with the sausage and diced onion already in the dish. I'll definitely make this again. I think I'll try Italian sausage and some Italian cheeses..yummy

Green Bean and Mushroom Medley

This is a great recipe for fresh green beans. I omitted the carrots because I had 1 and 1/2 lbs of green beans to cook. I used an 8oz bagged of sliced fresh mushroom and it turned out great. Like other reviewers I didn't add the salt only used the season salt and my roasted garlic & sea salt grinder from Costco. I took this dish to my Mother in laws for thanksgiving and she loved it. She saved the few leftovers for herself. I will be making this again, it’s a keeper.

Chile Colorado

This is a great recipe, just what I was looking for. Easy and Tasty. The only changes I made was not using the flour, I didn’t feel it was needed. The chili broth will thicken while cooking with the lid removed. I did add Garlic to the onions and some oregano to the chili puree. This is a definite keeper.

Thighs on Rice

Even though I browned the thighs before adding to the cooking dish this recipe came out very greasy. I didn't even add the butter. A 1/2 cube of butter would have made this even more greasy. I won't be making this again.

Southern Living Magazine's Chicken-Fried Steak

This is a good recipe. I always use cube steaks for chicken-fried steak and I liked the addition of crackers crumbs for the breading. I never use the amount of oil called for, just enough to brown the steaks nicely. I added coarse ground blk pepper to the crumb mixture. I didn't have red pepper and I'll be sure to use it next time. I like food with alot of flavor. Using 2 cups of milk always makes enough gravy for my family of 4 and it's really good with garlic mashed potatoes.

Zucchini Patties

I followed this recipe with a cpl of changes. I used monterey jack instead of mozzarella and also added chopped fresh garlic. I really didn't care for the texture. I won't be making this again.

Libby's® Famous Pumpkin Pie

This recipe is the only pumpkin pie recipe I'll use. I omit the cloves and ginger. I do increase the cinnamon a bit and add about a 1/4 tsp of nutmeg. If I have extra pumpkin filling left after filling my pie plate, I just pour it into a little baking dish and cook it along side the pie. But watch it closely because it will cook faster then the pie.

Asparagus Quiche

I didn't have much luck with this recipe. First off, if I make this again I'll prebake the pie shell. Only the crust on my shell was cooked. I would also chop the aspargus smaller after steaming. It didn't have a bad taste. It just seemed to chunky for a quiche.

Asian Tuna Patties

I didn't care for this recipe that much. I used 2 cans of albacore tuna so they didn't taste fishy. I just didn't like the combination of flavors the ingredients created. I won't be making this again.

Long Soup

This is a great Recipe. Hubby liked it so much he asked me to make it again the next night. I did add a clove of garlic with the Cabbage and pork and I also grated the ginger instead of mincing it.

Banana Crumb Muffins

I just made these Muffins again and they always come out moist and delicious. I always use extra light olive oil instead of melted butter and it works out great. The topping makes them even better. I also always make 12 cup cake size muffins instead of 10. My 13 year old Son would eat all 12 if I let him. This recipe is a keeper and I've past it on to my friends at work and everybody raved when a coworker brought some in for all of us. Thanks for a great recipe!

Egg Foo Yung I

My husband loves Egg Foo Young and this was a big hit. I did add some sliced celery and minced garlic to the vegetable mix and also added onion powder to the sauce mix. I also added a 3rd tablespoon of cornstarch to thicken the sauce a bit more. I'll be making this again.

Taco Casserole

My Family really liked this recipe. I do too. It's quick, easy and tasty. I didn't have tomato soup on hand so I substituted an 8-oz. can of tomato sauce with a little water to make up for the soup. I also added some minced garlic with the onion. I'll be adding this to my list of favorites. Thanks for the recipe!

Chicken With Mushrooms

This is a great recipe. I didn't have seasoned bread crumbs so I seasoned my plain crumbs with dry oregano, garlic powder and onion powder. I added minced shallot with the mushrooms and used provolone instead of mozzarella. I will definitely be making this one again.

Super Short Ribs

This recipe sounded so good, but my Family really disliked it. I ended up taking the ribs out of the cooking liquid, put them in a new baking dish and covered them with our favorite BBQ sauce so we could eat them.

Fluffy Potato Casserole

I did just as the recipe directed and it came out horrible. It was very dry with no taste. It took alot longer to cook through then the recipe called for.
