Seafood Creole

Didn't have tomato sauce, just put in a little extra chopped tomatoes and a little more stock. Also added 2 tsp bottled Cajun seasoning. Excellent served over rice.

Vegetable Tostadas

I didn't have a jalapeno on hand, so to add flavour I added approx. 1 tablespoon of taco seasoning and a dash of Frank's hot sauce to the soup mixture - delicious! I rolled the leftovers up, wrapped in some wax paper and nuked for lunch the next day and they were just as good. Thanks for the great recipe!

Cheese and Bacon Potato Rounds

These were a MAJOR hit with everyone. I took a previous reviewer's suggestion and added a little Ranch Salad dressing to the cheese/bacon/onion mixture - made it easier to spoon onto the potatoes. thanks for the amazing recipe!

Baked Penne and Smoked Sausage

To the browning sausage I added 1 onion diced and 1 clove of garlic minced. I also added a little more cheese than was called for. This was an excellent dish that everybody loved, especially me who only had a casserole dish and a skillet to clean up after making a casserole!!! Loved it!!

Potato Rounds

These were great - I didn't pre-boil, just put the rounds in the oven without the toppings for approx. 20 minutes at 400 degrees. Lowered oven temp to the 350 the recipe calls for, added the toppings and finished them. We all loved them. I did add a little garlic powder, sliced green onions, and pepper to the rounds.

Burgundy Pork Tenderloin

Have made this several times since finding the recipe and it is AMAZING! For the packet of gravy mix, I use the Knorr Hunter gravy. Have made for us, and for company and all love it. Thanks for the great recipe.

Eggplant Mixed Grill

I had no eggplant, but did have the rest of the veggies called for. Also, had no fresh herbs and no time to get some, so used dried. This is an EXCELLENT marinade. Everybody loved the veggies - even the veggie haters! Thanks for a great recipe.

Smoked Sausage Oktoberfest

Made this for a potluck and it got rave reviews. I did not add the potatoes as I was to bring a "meat" dish. I only had one apple, and one bag of refrigerated sauerkraut. I threw it all in my slow cooker for ease of cooking/transport, and it was a big hit! Thanks for the great recipe.

Creamy Pesto Shrimp

Have a very similar recipe, but I melt the butter, add a couple of cloves of minced garlic and about 1/4 tsp ground nutmeg. Cook for a couple of minutes until the garlic is fragrant, and then add the cream and continue with the recipe. The garlic and nutmeg bring out all the flavours and blend deliciously!

Southern Style French Onion Soup

I used two larger onions, as we like a little more "substance" in our soup, and only used 2 bay leaves. I also just added the broth and wine to the pan I had done the onions in, so I could scrape all of the onion flavour into the broth...excellent soup. Thanks for the great recipe.

Cheddar Bacon Hamburgers

Broccoli Corn Casserole

Had unexpected company for dinner, so tried this recipe. All wanted a copy before they left, it was wonderful. I used a combination of a little bit of frozen green beans, and a little bit of a cauliflower/broccoli/carrot combination that I had on hand. I topped with the entire small package of stuffing I had. It was delicious, and GONE. Thanks for saving the day with your great recipe!

Baked Fish and Rice

While I loved that everything cooked in one dish, we all found the fish to be kind of boring. I'll probably try this dish again, but I'll add more herbs to the fish to give it a little more flavour. *Tried this again since first review, and added a sprinkling of the following to the fish: dill, seasoned salt, parsley, garlic powder, onion powder. NOW this is an excellent recipe, thanks.

Almond-Topped Fish

This fish was amazing! We enjoyed it so much, the gang wants it once a week from now on. The only thing I did differently was to use Tilapia, as that was the only fish I had on hand. A little mushroom rice and a salad and you've got the perfect, quick meal.

Mushroom Kabobs

Excellent marinade for veggies. I've made this 6 or 7 times now, and it's excellent every time. I sometimes add zucchini pieces, or onion wedges and I usually use a red and yellow pepper for colour, and because we enjoy them more than the green.

Hearty Hash Brown Dinner

We thought this was very good in the slow cooker, and then we tried it in the oven as well and loved it. In the oven I mixed the layers up -put the beef in the bottom of the casserole dish, then the veggies, then cheese,then potatoes so that as it cooks, the potatoes get a little crispy on top, which we love. Added half of the fried onions in with the potatoes and added the rest on top for the last 5 minutes. We've mixed it up with different flavour soups as well. Great!
