Peanut Butter Banana Pancakes

Great recipe! Very fluffy and good flavors. I halved th recipe and it was enough for me, my husband, and 4 year old. Everyone liked it!

Taco Casserole

I wanted to love this because I love casseroles and tacos. The only change was to add corn and use rotel in place of the tomatoes. The dish was way too sweet. I was skeptical about the tomato soup, and that was the problem. If I make ut again, I will sub the tomato soup for something else, add black beans, and only use half of the seasoning packet. My 3 year old did seem to like it though.

Calico Bean Casserole

This was fantastic, very hearty! My 3 year old liked it too. I did cut the brown sugar by half. It was still a little sweet to me to be a main dish, I'd probably cut the sugar a little more next time.

Cheesy Chicken Meatballs

I was looking for a way to use up some ground chicken, that I could also serve my 3 year old. These were moist and flavorful, and I'll definitely be making again. My 3yo really enjoyed them too. I did make the following substitutions. Only used 1 egg, and cut the oil by half (I also did olive oil instead of vegetable oil). I used regular cream cheese, since that's what I had. To make up for that, I used minced fresh garlic instead of garlic powder (I think I would do that next time too). I used fresh basil and parsley instead of the italian seasoning. I always like my meatballs with fresh parsley!

Blueberry Oat Muffins

I usually experiment with lots of different recipes, but I keep coming back to this one! I've used blueberries, raspberries, and strawberries, and they're all delicious. The orange juice adds a nice subtle flavor. The oats seem to melt into the muffin, so they're not obvious but add a good texture without Being drybat all. This is definitely my go to muffin recipe!

Mini Meatloaves

I love meatloaf, and this was no exception! Only changes were to sauté some onion, carrots, and green peppers to add to the mix. I also made in muffin tins. Even my 3 year old loved it and even asked for it the next day!

Taco Pie

This was a good, hearty meal. I added a can of corn and refried beans - I do think it needed a litte more variety than what's in the recipe. It was great the next day too. My toddler wouldn't really eat it, but that doens't mean anything, he can be picky!

Turkey and Quinoa Meatloaf

Yum! First time cooking with quinoa. I couldn't really taste it, but I liked knowing i was cooking with healthy ingredients. I was rushed for time, so I made meatballs and cooked for 18-20 min. The sauce was great. My 22 month and husband liked it - and they are hard to please!

Sour Cream Noodle Bake

This is a good hearty casserole, easy to make and kid-friendly. I didn't have tomato sauce, so I had to use a can of diced tomatoes. I liked having the tomato chunks in there, but I think it would have been better with sauce (next time I'll do both). I also added a can of kidney beans. I especially like the sour cream flavor. Will make again!

Peanut Butter and Jelly Oatmeal Pancakes

Very good! I added a little more peanut butter, and then a little more flour to thicken up the batter, but otherwise made as directed. Since I was making for my 15 month old, instead of adding jelly, I added fresh blackberries to the batter. Very unique twist on pancakes - I'll definitely make again!

Banana Pancakes I

Just finished a batch - yum! I made exactly as directed, except added 1/2 tablespoon vanilla extract and spme flaxseed. I followed the advice of another reviewer and mashed the banana in a baggie. I was able to get it really liquified, so the pancakes had an even banana flavor, and not big clumps of banana.

Blueberry Zucchini Bread

I made this for my 1 year old, so I followed some of the other reviews to make it a little healthier. I substituted 1/2 of the oil for applesauce, and use 1/3 wheat flour. Also, I cut the recipe in half and it made 9 muffins (baked at 350 for 25 min). It was delicious and even my husband who said he wouldn't eat a "vegetable" muffin loved it!

Traditional Mashed Potatoes

Slow-Cooked German Short Ribs

This was great! I only used 1/2 of the brown sugar but otherwise made it as directed (and doubled the sauce). I gave it 4 stars instead of 5 because the ribs were a tad dry. I cooked it 8 hours, but next time I'll try 7 hours. I served with mashed potatoes and roasted carrots - yum!

Rempel Family Meatloaf

I've tried several meatloaf recipes, and this one is a keeper. Instead of using a loaf pan, I just shaped it into a loaf and baked it on a slotted pan (so the grease could come out). The meatloaf didn't hold together too well, but maybe that's because of how I baked it. I used a glaze of 1/2 cup ketchup, 1/4 cup brown sugar, 1 tsp mustard powder, and a little nutmeg. I'll definitely make again!

Cream of Celery Soup

I used an immersion blender to just puree the vegetables directly in the pot. Without keeping the vegetables in, it seems like it would just be celery-flavored milk! The flavor was good, but I prefer my creamy soups to be a little thicker. I will probably make again though.

Awesome Slow Cooker Pot Roast

This was so good! I made some changes based on other reviews. I seasoned the roast with garlic powder, rosemary, and flour, and then seared in olive oil before putting it into the slow cooker. I used one can of cream of mushroom and one cream of celery. I replaced 1/2 cup of the water with red wine and added a few splashes of worstershire. I only used a 3-lb roast and cooked for 8 hours. It was so moist and tender. I will definitely make again!
