Basic Corn Muffins

Wonderful texture, and easy to make. I made six jumbo muffins, and had to cook them about 25 minutes.

Colonial Brown Bread

This bread was just OK. Something about the flavor just didn't seem right. It was a little better when eaten with herbed spreadable cheese.

Mexican White Sauce

I was making a pizza with Mexican toppings, and I used this sauce instead of pasta sauce. It gave my pizza a wonderful zest. I will be making it again.

Oatmeal Pancakes II

I made these for dinner and garnished them with sour cream. They were just average. They were easy to make, but they didn't really taste any different that a typical buttermilk pancake. Even the texture was bascially the same. If I try it again, I won't process the oatmeal.

Mock Tuna Salad

Makes a nice sandwich spread. Excellent for a light lunch. I was out of mayo, so I used a thousand island dressing instead, and it was fine. I'll definitely be making it again. I think it would be good with more relish. I also might try adding some garlic.

Peasant Bread

The top of the bread collapsed in on itself, and it had an odd, sponge-like texture. I ended up throwing it out.

Grandpa's Peanut Butter Fudge

I got the oddest result from this fudge. I poured it out into a large round pan, and the center of the fudge set up nicely, but the outside stayed really soft. Also, it had more of a caramel flavor than a peanut butter flavor. I won't be making this again.

BUSH'S® Mexican Party Pizza

I like any food Mexican-style, and this is no exception. I made it with pinto beans instead of kidneys. I used a generic version of the Boboli pizza crust, which worked really well. I also added my favorite Mexican condiments: black olives, jalapenos, sour cream, guacamole. This is one of those recipes that can easily be altered to suit your preferences.

Peanut Butter Chews

Addictive and so easy to make. Instead of making balls, I just spread the mixture into a casserole dish, and cut it into squares. I will definitely be making these again.

Easy Oatmeal Muffins

Very easy and very good. Following some of the suggestions, I replaced the oil with unsweetened applesauce, increased the sugar to 1/3 cup, and used 3/4 cup whole wheat flour and 1/4 cup bread flour. I have already made several batches and will make these again and again.

Cream Cheese Bars II

After reading all the great reviews, I was quite disappointed with this recipe. My cream cheese filling never set, and it turned the inside of the crescent dough gooey. I may try this again to see if I can get a better result.

Mini Parmesan Scones

This was a nice modification of the standard baking powder biscuit. Since I didn't have a 1/2 cup of parmesan, I ended up using 1/4 cup parm and 1/4 cup mozzarella. Also, I omitted the salt entirely. This one's going in my recipe box.

Peanut Butter Magic Pie

Cottage Cheese Roast

I followed some of the others' suggestions and added 2 more cups of corn flakes. I also used only 2 eggs, added 1/2 of a chopped onion, and topped the loaf with ketchup. I'll definitely be making this again.
