Vanille Kipferl II

I made this for a book club meeting, to replicate the kipferl made in The Book Thief. It was quite a disappointment. First, I could not get it to form into cookies, it just crumbled apart. I finally added some milk and could barely get them to stay together. Second, they are not sweet. I guess that's how it is supposed to be, but I was expecting a cookie so it was not sweet enough to me (I ended up drowning them in the sugar to try to get more sweet into them). Third, there is virtually no flavor in these at all. I even added almond extract as others suggested, but it was very bland. Will not be making again.

I make this all the time, it is "comfort food" delicious! I never make a full batch unless I'm feeding a crowd; I just somewhat half it (I don't bother halving the canned foods). Also, I use dried herbs if I don't have fresh and it's just as good.

Too Much Chocolate Cake

The best chocolate cake ever! I have made it will all the oil and with 3/4 cup and don't notice a difference. I do prefer the mini chocolate chips; they float better in the batter instead of falling to the bottom.

Buttercream Icing

Real Hummus

It's good as it, but I use it as a base and go from there. My favorite proportions are: 2 cloves garlic, 1 can (15 oz.) beans, 4 TB lemon, 3 TB tahini, salt as needed. Also, I use cumin instead of pepper. For a fun twist, I sometimes add roasted red pepper (from a jar). One thing I think is important is to drain and rinse your beans, and use regular water instead of the can juice. It makes the beans taste fresher, and I don't use much water anyway. My kids love this!

Dijon Grilled Pork Chops

This is a winner... my kids scarf it down! I make it as stated, though I use whatever pork chops I have around (bone-in or boneless, thick or thin). Just remember to adjust the cook time because it is not good overcooked.

Grilled Teriyaki Tuna

This recipe is so simple, yet so yummy! My husband isn't a tuna fan, so I make his with tilapia, but I find the tuna perfect. So, it's a versatile fish marinade.

Best Lemonade Ever

This really is delicious; something about making the sugar syrup must really make a difference! I also use this for limeade, and it is great too. I never wait for it to cool, I just put it all together.

Coconut Cream Cake I

This is my go-to coconut cream cake, and it always gets a lot of compliments. I make it as stated, but instead of this frosting I make a fluffy cream cheese frosting (1 block of soft cream cheese, 1 1/2 cups powdered sugar, 1 tub of cool whip). I also leave off the coconut flakes, just as a personal preference.

To Die For Blueberry Muffins

This recipe is incredibly easy and delicious. You can play around with it, too. We use mostly whole wheat, and enjoy many variations (my kids love banana chocolate chip). One note is that the topping really makes too much; we half it or double the muffin mix, depending on how many we need to make.
