Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

This was wonderful! I had to make something for a pot-luck last night. I didn't have time to go to the store, but I have a garden producing lots of zucchini and tomatoes. I didn't have mozzarella, but I had pepper jack cheese. I did have enough time to salt and drain the zucchini, and I'm glad I did. I have found zucchini recipes to get really WET. This was just perfect! I got so many wonderful complements! I am definitely making this again.... there is still a lot of summer left!

Lentil Rice and Veggie Bake

After a weekend away I was looking for a recipe to use the lentils and rice that I had in the refrigerator. This was perfect! Obviously I modified the recipe using lentils and rice that had been precooked and that were left-overs from a previous meal. In addition I had left-over vegies from fajitas, and asparagus from an omelet, spaghetti sauce (homemade), and some crisp bacon. I sauteed onion, garlic, celery and carrots...added them to the lentils and rice with the chopped bacon. I seasoned them with hot sauce and dried red chili peppers since the fajita vegies weren't "Italian" seasoned. Mixed in the leftover vegies and put about 1 cup of spaghetti sauce ('gravy' in our family) on top. It was great! My husband said, "This is another one of those dishes that we can never duplicate....darn it!" Thanks for helping me clean out the refrigerator, and get dinner on the table without going to the store!!

Wacky Mac® and Plum Summer Salad

This was great!! I needed a salad for a pot-luck, and had a bowl of fresh plums in the kitchen. My husband forgot to pick up the spinach on his way home so I made it without. I used whole grain rotelli pasta, cut up 4 plums, and added a tablespoon of mayonnaise to the dressing to make it a little thicker. I put a small bowl of blue cheese on the side in case anyone wanted it. It was a big hit! I think I'll have the small amount of leftovers on a plate of spinach for lunch tomorrow!!

Quinoa Vegetable Salad

This was wonderful!! I cooked the quinoa with whey leftover from making cheese. I had no cucumber, so I used celery, no red onion so I used scallions, and substituted basil for the cilantro and mint. This got 5 stars from my husband, who is"ify" about salads for supper!
