Buffalo Chicken and Roasted Potato Casserole

Reviewed: Feb. 5, 2013
I wanted to love this and it had high ratings, but it just didn't work for me. We'll eat it this week but the taste was off. I won't be making this again.

My Amish Friend's Caramel Corn

Reviewed: Oct. 7, 2011
Can't talk.....eating. This stuff is good. The second time I made it, I used 10 ounces of prepopped pop corn, and added 1 cup of Spanish Redskins to the carmel mixture while still in the 4 minute boiling cycle; I also used sea salt and instead of regular butter, Smart Balance spread. Also, 10 ounces of popped corn fill a standard sized roaster. Baked for 15 minutes, gave it a good stir, and for another 15 minutes, another stir (if you like it chewy); if not, cook longer. Thank you for the excellent recipe.

Classic Macaroni Salad

Delish. Good base. A tip on the onions: After chopping, put in a colander or sieve and run under cold water for 30 seconds or so, that will take the bite out of them.

Sandwich Spread

Reviewed: Sep. 20, 2011
Fine dining indeed. I remember Mom making this for us kids back in the 60s and we'd have friends over during the summer for lunch and she'd give us a big bowl of it with a loaf of bread and Kool Aid and send us all out to the patio and we were in Kid Heaven. Thanks for the good memory and hence that's why I gave it 5 "stars".!

Johnsonville Italian Meatballs

Reviewed: Sep. 19, 2011
Very good recipe. I used Italian turkey sausage and had a good result, very tender. Also, instead of regular bread crumbs, I used Panko bread crumbs. Once I've baked for 20 minutes, I add to my marinara sauce and let simmer for an hour.

Chicken Cheese Chowder

Reviewed: Aug. 30, 2011
Excellent recipe. I have made this for many years. I do add 1 cup corn and do saute the veggies a bit in butter/olive oil, sea salt and pepper, and while cooking the veggies, omit the soy sauce and add 1 tablespoon of McCormick's curry powder; then saute the veggies until the onions are translucent.

White Sauce

Reviewed: Aug. 30, 2011
Great base white sauce. I use it for my Chicken Pot Pie and add 1 tablespoon of curry and proceed as usual. I'm making Mac & Cheese for a party Sunday and am going to use this white sauce as a base for that. As noted in many reviews, it can be used for lots of recipes and is good to have on hand.

Beefy Tomatoes

Very good base recipe. You can change up as tastes dictate. I have a bumper crop of maters this year and used ground white turkey, seasoned to taste with Chili Powder for something a little different. Thank you for sharing.

Best Chocolate Chip Cookies

Reviewed: Jul. 18, 2011
I took these to a pizza/pool party Saturday night and everybody loved them. I baked them on parchment paper and as suggested by others, added 1/2 t cream of tarter (for a more cracked cookie as opposed to smooth). I also use Egg Beaters because that's what I had on hand. Very good recipe and excellent cookie. Thanks Dora.

Ultimate Twice Baked Potatoes

Reviewed: Jul. 2, 2011
Perfectomundo! I just went for it and used whole taters and didn't cut in half and didn't have to "deal" with them spreading out. Just make sure you leave a good tater wall; also I baked up 2 extra taters to add to the mixture just to have plenty! They make good leftovers to boot.

Strawberry Cake from Scratch

Reviewed: Jun. 24, 2011
Good and moist but only (as stated) measure the flour after you sift, and separate the eggs, whip the whites until fluffy and then gently cut into the batter at the end. Also, cream cheese or vanilla frosting, I add 1 tablespoon of strawberry jello, 1/2 cup chopped pecans or walnuts, and 1/2 cup coconut to the frosting to make it more fun.

Pie Crust IV

Tip: I always add a tablespoon of sesame seed to the crust before I start cutting in the shortening. It gives your crust a bit more flavor.

Excellent flavor. I couldn't find fresh cranberries so substituted dried and that worked out fine. Thanks for the great recipe.

Quick and Easy Spinach Bread

Reviewed: Mar. 6, 2011
This recipe is excellent as is. I added 3 links of Italian turkey sausage and 1/2 cup chopped onion and cooked all with the spinach. Fed 2 hungry people and made a good leftover for the next day's lunch. Thanks Anch for the great recipe.

Spinach Pasta Salad

Reviewed: Feb. 7, 2011
Perfect pasta salad. A tip on the onions: After chopping, put in a sieve or colander and run cold water over them for 30 seconds, as that will take the "bite" out of them and won't be as overpowering the next day. Thanks Kim for the great recipe.
