Foil-Pack Taco Chicken Dinner

this was super good and super easy. the only issue i had with it was that the liquid from the chicken mixed in with the potato/cheese mixture, making it a bit gloppy. still, delicious.

Emily's Famous Fried Potatoes

This wasn't bad exactly, but I would change a few things the next time I make it. I would fry the potatoes in the first place instead of boiling them (they were too mushy). I would chop up the spinach also, the recipes didn't specify and since I was using baby spinach it didn't seem like it would be a problem but all the leaves bunched together so there were big hunks of spinach instead of a more even distribution. Plus it would be helpful if the recipe gave some cooking times.

Meat Loaf Pie

I skipped the ketchup and worcestershire in favor of a little taco sauce and chopped spinach. I added a chopped garlic clove when I browned the meat and onion. Next time I think I will add some peas to the corn for more vegetables. Also, I precooked the pie crust to keep it from getting soggy. Very tasty!

Watermelon Salsa

This was better than I would have thought. I used jalapeno sparingly since I didn't have any anaheim peppers. If I make this again I will add some cilantro, I think that would bump it up to 5 stars.

Spinach Corn Muffins

I really liked these. You can hardly taste the spinach and the jalapeno added a nice little kick. I halved the recipe and it only ended up making 5 standard muffins.

Spinach Brownies

I quartered this recipe so it ended up more like a giant spinach pancake but it was very tasty. I added a little chopped garlic and used mexican cheese along with the mozzarella.

Spinach and Potato Frittata

I made this in a saucepan instead of a skillet since I didn't have any skillet lids. My boyfriend and I both really liked it and he's rather hard to please. And cooking potatoes in a covered saucepan like that was an epiphany, much easier than frying and they taste just as good. A winner of a recipe!

Lemon Yogurt Muffins

I just made these with some seedless oranges instead of lemons. I used a little more orange peel and juice than I would have lemon since I figured the lemon would have been stronger. They turned out really well. Definitely watch the cook time though, mine were done a bit before the 20 minutes.

Cauliflower with Dijon Sauce

Meatloaf With A Bite

I made this recipe as written and wasn't super impressed. It was pretty loose and took more like an hour and a half to cook. I might try it again using some of the suggestions offered on here.

Sweet and Sour Sauce I

I was a little worried while stirring this on the stove, as the ingredients did not look like they were blending. It came out really well though, and I only used half the soy sauce it called for. I also used mostly pineapple juice instead of just water. I would definitely make this again.

Noisemaker Appetizers

I made this for a new year's eve party and was very disappointed. The wonton wrappers burned on the ends before the middles were crispy and the dill/butter wash made them greasy. It might be worth it to try frying the cones instead of baking. The filling wasn't bad (I ended up saving most of it for a dip) but the recipe was too much work for too little result.

Baked Sesame Chicken

I made this for dinner last night and using suggestions from other reviewers, used only half the soy sauce and added about 3 tbls. water. I also added just a pinch of garlic to the dry ingredients. It turned out pretty well, the flavor was good and it was pretty easy to make. I would use this recipe again.

Pizza Casserole

I made this for my boyfriend and his seven year old last night, subsitituting mushrooms for for most of the green pepper and onion (I added a little of both and did not tell them). It turned out really well and they both ate it, although I thought it could've used a little something; more green pepper and onion perhaps? :) I would make it again, particularly since they are both such picky eaters.

I substituted half the mayo with sour cream, plus a little more cheese than the recipe called for and put them on frozen puff pastry squares. Quite tasty and a nice presentation with the puff pastry.
