Asian Coleslaw Light

Very good! Most of these Asian style coleslaw recipes use way too much oil. I like that only 3 tablespoons are used in this one. I followed the recipe except that I added a teaspoon of sesame oil and about 1/4 C chopped fresh cilantro to give it a real Asian flavor kick.

Luscious Lemon Snaps

I followed the recipe except for using only 1/2 cup oil and 1 cup sugar. Everything else was the same. People who hate to zest, try a microplane. Zests easily in seconds. My favorite kitchen tool. I had no trouble removing the cookies from the cookie sheet after letting them cool a few minutes. Nice balance of tart and sweet. Made 6 doz using a teaspoon. Very easy preparation. If people are having trouble removing from cookie sheet, get yourselves a good quality sheet and you should have no trouble.

Spicy Orange Chicken

I made the recipe exactly as presented but used boneless chicken breast. I thought the amount of ginger overpowered the orange flavor, so I would cut the amount at least in half. I also think I would cut down slightly on the brown sugar. And I thought the sauce was too thin, so next time I would thicken it slightly with a little cornstarch dissolved in a little water. I think the recipe has potential to be a four with these changes.

Best Ever Banana Bread

A good base to start from; I didn't have a cup of mashed banana so I added enough applesauce to make a cup. I also only used 1 C sugar, and used 3/4 C whole wheat pastry flour in place of the regular flour. Also only used 1/4 C oil and replaced the other 1/4 C called for with more applesauce. It came out GREAT. I think next time I can even cut more sugar out.

Iowa City Oatmeal Cookies

Really loved these. Didn't have any trouble with crumbly cookies or dough. Used 3/4 C king arthur unbleached white flour and 1/4 C whole wheat pastry flour. For the cereal added Cascadian Farms granola as I didn't have grape nuts. Used pecans and dried cranberries instead of chocolate chips. Added 1/2 t cinnamon and 1/4 t salt. VERY GOOD!!!10 minutes did the trick with the heavy duty baking pans I use.

Slow Cooker Beef Stew I

I thought this was a wonderful beef stew, and so easy. The only thing I did differently was add some peas and corn for color and a tablespoon of worchester sauce. Flavorful, easy, what could be better?

Raspberry-Lemon Pie In a Toasted Coconut Crust

I made this tonight and my husband just loved it. I followed the instructions except I only used 1/2 the butter for the crust and 1/2 the butter for the filling, and only 1 cup of sugar instead of 1.5 cups. It came out just fine. I used a small glass pie pan and was able to cut and serve it without it falling apart. Pretty tasty!
