Christmas Breakfast Sausage Casserole

Oh, wow...this was delish!!! Hubby liked it and I loved it. Not as pretty as the pic, if you add soy, but I don't think you need to add it.

Alfredo Sauce

Loved it as a basic...added my own stuff,Ie garlic,mushrooms, and 1 can of chicken over Fettucinni noodles. Oh, I used evaporated milk and a corn starch slurry ,instead of heavy cream.AND added provolone cheese.

Thai Chicken Balls

loved these~& I forgot the sweet chili,so made my own with honey and pepper sauce,but then forgot to to mix it with balls after I put them in muffin pan,so I dribbled the sauce on top....Loved them!! Baked them,so lower in fat cals

Mom's Stovetop Pork Ribs

Did as directed and just swapped out pineapple-ginger Terryaki sauce for the soy. What a great taste and easy method ! My son and Hubs liked this very much,as we are not much for BBQ anyway.

Carolina Fish Cakes

I used leftover baked whiting and a can of tuna. Tooo sticky to roll in bread crumbs..used a scoop and then put in silicon cupcake holders and baked in muffin pan. These were delish with a sauce I made up..mayo,dark mustard,lemon juice and honey!! Fab! Would make again & try something different for the stickiness!

Chicken and Biscuit Casserole

used buttermilk pancake mix,no basil in mix: used chipolte flakes in cubed chikn ;used frozen veggie mix and sauted my own fresh celery,red onion, and garlic.Note: I used chikn bouillion cubes, WAY too salty! But this actually came out decent and my dh loved it!

Split Pea and Ham Soup I

Added chopped potato and some bacon,as i felt I didn't have enough ham pieces. I also added a cup of chicken broth. Anyway, it was delish, and finally thickened up the next day!

Triple Berry Crisp

Did not make this as shown, as I only had some strawberries and blueberries,so I used fruits that were going off! AND, I had run out off flour! and, had only 3 pkgs of instant flavored oatmeal! So, I ended up using ground-up nuts, and Panko crumbs and some pancake mix!!!!! You don't even want to hear about my brown sugar fiasco. At least I had some. Baked and hubby ate it warm out of the oven and loved it! You can tell I never bake!

Roasted Beets and Sauteed Beet Greens

only had 2 lg beets and they baked forever,and still didn't get soft. So I peeled them and used bok choy for the greens,as they came without tops.Hubs n I enjoyed these, but I think fresh beets are too messy to deal with.

Apple Honey Bundt Cake

I am not a baker, so I am not sure what I did wrong, but this batter killed my hand mixer! I used some unsweetened applesauce in place of some oil, and I used Splenda, and the batter was so thick it froze my beater. I did actually finish mixing it by hand, and did bake it....for over 2 hours!!!! It tasted fine, a little like it wasn't quit finished, but ok. I am thinking it was the flour, but i put it all in a glass jar and do not remember what type of flour it was. I will add a photo soon.
