Cake Balls

Reviewed: Apr. 14, 2012
So these are amazing! Yes they are time-consuming (I personally find rolling the balls the most labor intensive, but I feel that way about those cute meatballs in Holiday Wedding Soup too ;) I agree that boxed mixes make boxed cakes....why not just take your favorite cake recipe, a simple icing recipe and make them from scratch??? Muchhhhhh better! I made the cake/icing mix after cooling the cake 30 min as directed, my icing was a bit thinner than canned so it was easy to add in as needed. I froze the 80 truffle balls overnite on the wax paper lined baking sheets. They were perfect for coating in the chocolate! I did Red Velvet Cake Truffles with Cream cheese icing, dipped in melted Wilton chocolates....white, dark, and milk chocolate. I put 3T of melted chocolate (each variety in separate baggies) drizzled the truffles, and put in mini foil cupcake liners for a party They are beautiful! One cake recipe yielded 80 truffles...so next time I'll 1/2 my recipe!

Parsley Red Potatoes

Reviewed: Oct. 13, 2011
So easy and sooooo good! Agree that sometimes we become garlic obsessed (I am 100% guilty as charged : ). So these were a nice change...I had a bag of Fingerlings I wanted to use up...cut them in 1/2,boiled and prepared as directed....fabulous!!

Butternut Squash Soup

Reviewed: Oct. 7, 2011
FABULOUS with only a few minor changes.....definitely decrease cream cheese to 8oz. and use neufch√Ętel for healthier version. I added just a dash of nutmeg and about 1/3 c canned pumpkin (leftover from baking!). It is so good!!!

Actually found this to be a bit on the dry side. Flavor was ok, not sure I will make again.

Stuffed Bell Peppers

Reviewed: May 2, 2011
Had no idea what vegetable protein was, lol. So I just substituted a can of black beans. They were great and my family loved them!! Will make them this way all the time, since I already have a family Stuffed Pepper recipe that uses ground beef/turkey. These are a good vegetarian alternative.

Easy Lettuce Wraps

Reviewed: May 2, 2011
These were amazing! We love Lettuce Wraps and regularly make a great Grilled Chicken and Corn recipe with lime-yogurt sauce. We did not have one with ground meat, so this was perfect. Used ground turkey and still found them fabulous... will make again and again!

Baked Buffalo Wings

Reviewed: May 2, 2011
My kids loved these... I pat dried the wings, dredged in the flour mix and chilled for several hours. I baked them over an hour, turning a few times and they were as crispy as if deep fried without the greasiness! Next time I will finish them off by stirring them up in a bowl with a butter, garlic, hot sauce mixture the same as I would if I had deep fried them.
