Colorful Frittata

I took this to the luncheon that my ladies' prayer group was having today & I was not only complimented by everyone on it, but was asked for the recipe, too. I didn't have mushrooms, so I omitted them. I used a bag of frozen onion/pepper blend (onions, green & red peppers chopped) and sauteed them & it worked out beautifully. I'm making it again tonight for my family for dinner & think they'll love it, too.

Cinnamon Pear Frozen Yogurt

Oh my goodness! This is fantastic! I made it with Splenda & fat free plain yogurt (come to think of it, I forgot to put vanilla in it like I'd planned). The kids all loved it & so did we. We doubled the recipe & ended up with only a tiny bit left over. The flavor is excellent & intense. The texture is creamy and smooth. Everyone loved it, even my 19 y.o. son's friends who were here for a visit.

T's Sweet Potato Fries

Could have been a little more "firm" but flavor was excellent. We dipped them in honey & it was a real treat. The sweet potato fries I've had before were deep fried; so it's not really a fair comparison, but these were WAY healthier.

Country Quiche

I made it to take to a potluck. It was a huge hit with everyone! I took two of my kids & they loved it...and so did the other folks at the potluck. I used Four Cheese Italian instead of the swiss, used ham instead of the bacon (it's what I had on hand) and increased the cheese just a bit. It bakes up to be a firm but tender quiche with terrific flavor.

Homesteader Cornbread

This is an excellent recipe & is everything I hoped it would be. I've been looking for an excellent cornbread recipe for years & finally found it! I served it with chili, sour cream & cheese & it was excellent. It was moist and held together well. Soaking the corn meal in milk before mixing helped it not be grainy (something I've never liked about cornbread).

Smushed Apples and Sweet Potatoes

What an excellent substitution to the high fat, high calorie sweet potato casserole! We're adding this to our holiday traditions! Delicious! Note: Even our sons who aren't big on sweet potatoes love this one and came back for seconds!

Blueberry Cream Muffins

Absolutely outstanding. Everyone (family and hubby's co-workers) gobbled these down. I got many rave reviews for these muffins. These muffins are moist, rich and extremely delicious. The best recipe I've ever found.

Funnel Cakes I

Sloppy Joes II

YUM! I can't tell you how many times I've been asked for this recipe when I bring it to potlucks. These are the BEST sloppy joes that I've ever had in my life. I'll never buy Manwich again (this is just as easy and SO much better).

Blackberry Cobbler

Incredibly nasty! What a total waste of wonderful, fresh picked blackberries. The cobbler part of it turned out gummy and rubbery. I expect cobbler to turn out like dumpling-type things laying on top of the berry part. This had a slimy cake-like substance with the berries on top of it. Not what we expected at all. My sons choked down one serving & the rest didn't get eaten.

Chicken Casserole Del Sol

All my cookbooks are in storage (we're in temp housing right now) and we're getting tired of the "same old thing". I'm sure glad I found this recipe! It's been really hard to cook in temp housing because I don't have all my own kitchen stuff right now...and this used basic stuff that's included in the apartment! Thanks for putting this recipe here!
