Perfect Turkey

This was my very first Thanksgiving turkey, and it didn't disappoint. I'm sure it would have been better if I'd have had the space in my refrigerator to fit a stock pot to brine it, but alas, such is apartment living. Nonetheless, this was delicious. My only complaint is that my mother (who is queen of gravy) and I had a hard time making gravy because of all of the butter that was in the drippings. A little bit too much for our liking but it didn't detract from the turkey. It was very pretty :-)

Best Oven Baked Chicken

I'm rating this based on the sauce and potential alone because I think I botched my chicken through no fault of the recipe. I had a 7.5 lb bird, and am a bit of a novice with whole chicken roasting. An hour in, and the chicken was still raw as can be. So I did the 20 min/lb rule and followed the instructions. When it came time to flip, the chicken literally fell apart, so the flip was impossible which left me with very soggy chicken skin. Parts were really moist, and other parts were really dry. My bad...The sauce however was dynamite! I followed the instructions exactly and my boyfriend and I loved it. I'll definitely try this again, maybe with a smaller bird or with chicken parts instead.

Tomato Basil Salmon

I found the cook time on this to be much too long, but then again, it could just be my oven. The salmon came out a bit overcooked after just 13 minutes. I did bake it for 10 minutes and then turn the broiler on as recommended by other reviews, so I probably won't do that again. Other than that, the flavor was really fresh and light and a nice change from my go to glazed salmon!

Basil Shrimp

I don't have easy access to a grill, so I had to cook this on the stove top. I really enjoyed the flavor, but next time I will definitely cut back on the mustard, if not omit it entirely. I loved the lemon, basil, and garlic though. It was delicious!

Raspberry and Almond Shortbread Thumbprints

I thought these were very good, simple cookies. I chilled the dough in the fridge as suggested in other recipes, and the cookies didn't become overly flat and the jam stayed in place. The icing came out in one big ball though, so I kept having to add milk to thin it out. I'd love to try adding chopped walnuts to this to give it a little something extra!

Quinoa and Black Beans

I really liked this recipe the first time I made it, as is, but I thought it needed a little bit more "pop." The second time I made it, I added a touch more garlic, added coriander, and added a bit of onion powder. I found it to be a better stand-alone dish if you're generous with the seasoning.

Baked Haddock

This was a great basic recipe! I used panko bread crumbs and they gave the fish a great crunch. I also followed other users recommendations and cooked it on a wire rack, but this made the butter drip off into the pan and burn/smoke in the high heat, so I think I'll skip that next time. You can definitely add to this, but it's a great, easy recipe as is.

Baked Teriyaki Chicken

This was perfection! My boyfriend and I agree that the sauce tastes like it came straight from a restaurant. We found ourself scraping the extra from the bottom of the pan to dip the chicken in, so next time I'll make some more on the side. So good!

Spicy Garlic Lime Chicken

This was okay as written for me, but I definitely think the spice mixture could be doubled next time. The lime juice was a little bit too overpowering for me as well, so next time I think I'll either cut that down or add some chicken broth to balance it out.

World's Best Pasta Sauce!

I stayed pretty close to this recipe as is, just didn't have any fennel on hand and used ground Italian sausage instead of sliced. I could eat this sauce plain, it's so good! I'm excited to try experimenting with ratios and other ingredients but as is I still give it a 5/5.

Chicken in a Pot

This was delicious and incredibly easy! Really didn't change much, just doubled the sauce ingredients and swapped the oregano for italian seasoning since I'm not overly fond of oregano on its own. I added some Parmesan cheese to the breading as well. Definitely will make this again and again.

Awesome Slow Cooker Pot Roast

I've made this recipe a couple of times now, and it keeps getting better. Each time I used a 2.5 lb chuck roast, but the first time I was pressed for time and cooked it using the high instructions. The second time I cooked it 8 hours on low and WOW. What a difference. The meat literally melted in my mouth. I also seasoned the meat with garlic powder, onion powder, salt, and pepper and seared it on all sides, cut little slivers of garlic and stuck it into holes I cut in the meat, swapped out the water for equal parts of red wine and beef broth, and added a tbsp of Worcestershire sauce. My boyfriend said it was the best pot roast he's had and I couldn't agree more.

Seared Sea Scallops

Personally, I found that the herbs and seasoning really overpowered the scallops, and I cut back a bit from what the recipe called for. The cook time was perfect though, so for my first time actually searing scallops myself the texture came out nice.

Laura's Quick Slow Cooker Turkey Chili

This was unbelievable!! I listened to some other reviewers and made a few changes. I used 1 19 oz can of tomato soup, added 1 can of diced tomatoes with green chilis, swapped out one can of corn in place of one can of red kidney beans, left out the allspice, and seasoned my ground turkey with onion powder as it was cooking. I was a little pressed for time, so I cooked it on high for 1 hour and on low for 6. This was one of the best chili recipes I've ever had and I will definitely be making it again!

Cajun Barbecued Chicken

This was delicious! I added some red pepper flakes and garlic powder and used olive oil instead of vegetable oil. I also broiled them rather than grill them (7 min each side) and they came out PERFECT. So easy and great flavor. Definitely will make this again.

A Good Easy Garlic Chicken

So fast and delicious! I did tweak it a little bit. Swapped out half of the butter for olive oil, and i didn't have any seasoning salt on hand so I used half a teaspoon of salt with 1/4 tsp of cajun seasoning and 1/4 tsp celery salt. I also added 1/2 an onion and 1 clove of garlic and some worcestershire sauce. Yummmm

Strawberry Oatmeal Breakfast Smoothie

This was so good! I'm a big smoothie fan, but I usually find that they aren't filling enough to be a full meal. This one absolutely was. I followed the suggestions of others and blended the oats first, used vanilla soymilk, skipped the vanilla extract and sugar, and swapped out some of the (frozen) strawberries for peaches. This is definitely a keeper. I'm looking forward to trying this with different kinds of fruit!

Twelve Minute Pasta Toss

I found this VERY salty. I'd be willing to try it again with less salt and perhaps switching brands of sundried tomatoes because it smelled so good cooking and was super fast and easy!
