Spiced Cranberry Apple Chutney

Excellent sweet chutney. Almost finished cooking now, house smells amazing! Instead of cutting down sugar if you dont want it as sweet, simply add a little cranberry juice, or to be more like a true chutney add small amounts of apple cider vinegar towards the end of cooking to your preference. I add 1/4 cup red onion and a clove of garlic, also a little oriental 5 spice and cinnamon. about 4 or 5 good size oranges will give you the cup of juice and zest. Fresh ginger if possible. This is a delicious chutney recipe good for many uses, be creative! Going over brie stuffed chicken with prosciutto and wilted greens, yum!

To Die For Blueberry Muffins

They come out great with some tweaking. I've only made it twice and doubled the recipe, it comes out so dry but its obvious if that's the case. I add (if doubled) 1 stick of butter, 1-2/3 cup of milk and 1/8 cup veg oil. They come out great, just use common sense and mix to right consistency. other control point is not to over-mix the topping. use soft but slightly cool butter and don't mash. I use the edge of a fork and toss to coat butter until they are small bits.

New England Clam Chowder I

I didn't make this recipe but I read reviews and agree with a lot of other users. Definitely use the clam juice, why more water than needed if you have flavoring available? If using whole clams, steam and use the broth. In addition to onion I also use celery, and cooked them in the bacon grease. added thyme to mixture then added flour to make the roux for thickening. Also use parsley, hint of tabasco, and worcestershire sauce. thicken to desired consistency

Orange Chicken

Came out very good. made some slight changes. I sauted chicken with butter. I added canned mandarin oranges and some juice, the oranges mashed up so in the future I would add at the end. I seasoned chicken with salt and pepper and excluded pepper from the sauce, instead I used red pepper flakes. you can make as mild or hot as you like. I also added a little orange extract. Sauce came out really sweet and spicy, was delicious

Chicken Korma II

The dish wasnt too complex to make and came out good. One of the users said he used coconut milk instead of cream, i think i'll try that next time. Flavor was good. Could use more ground cashew (that would also help thicken), I also added rasins and whole cashews towards the end. I added more of all the spices and added more cornstarch slurry to thicken it a little more. I also added a little curry, and toasted all of the spices before adding, that can really bring out the flavor and aroma of the spices. Will experiment a little more with this one and maybe marinate the meat in some of the spices for a night
