Penne Pasta with Spinach and Bacon

We all LOVED This! (Added mushrooms and a bit more bacon, but basically, followed recipe!) Trying to get some healthier/lighter meals and this one knocked it out of the park!! YUMMO!

Yellow Squash Casserole

Loved it! Family loved it! Definitely making this one again. Only change was I used "Honey butter" R*tz crackers because I didn't have the regular buttery crackers but it was GREAT!

Fried Onion Rings

This made awesome fried onion rings, squash, and okra! We used carbonate water and added a few spices but basically stuck straight by the recipe. Definitely a must-have for the recipe box! Thank you for this one!!!

Asparagus Parmesan

Bought asparagus on sale. I like them but DH and DD aren't too fond of asparagus. DH actually found this recipe and both LOVED it! He says it's "by far the best asparagus I've ever had in my LIFE!" We went by the recipe except for cutting down on the oil. Used a couple tablespoons and the butter and it was plenty! Starting some onions first so that they carmelized by the time the asparagus was finished was the clincher for us! Added a deeper taste.

Cream of Mushroom Soup II

This recipe is GREAT!!! The family LOVES it! I followed the recipe closely on most things, dried thyme because I didn't have fresh, milk and sour cream because I didn't have light cream, etc... But it was fantastic and EASY! The family is begging me to make it again and insist that I put it on the "favorites" list.

Balsamic-Glazed Salmon Fillets

Made this with Salmon fillets and Tuna steaks. Went by the recipe very closely except didn't have dijon so I used yellow mustard. I don't know if that made a big difference or not but we did not care for it. DH & DD felt it would have been better if it were sweeter (will double the honey if we do it again) and I felt it was actually quite bland. Not a terrible recipe but we didn't care for it a lot.

LOVE IT!! I didn't have any honey but made it anyway. Honey may have made it too sweet for me because the family and I thought it was PERFECT! Will definately be making it again and again!!

French Onion Soup Gratinee

AWESOME! My family and I loved this. We made very minor changes - mostly because we didn't have certain items on hand (fresh herbs/wine) but this was exactly what we've been looking for, Restaurant-style!! Oh, we added sliced portobello mushrooms and it was really good!

Mexican Casserole

I altered this a tiny bit by using leftover cooked Turkey, so I skipped the frying stage. But it was soooo easy and it tasted GREAT. The family LOVED it! I highly recommend this recipe. DELISH!

Kangaroo Chops

We altered this a little because we did not have corn, but it turned out GREAT! Because each pouch is fixed separately, we could adjust the amount of ingredients to suit each family member! Everyone in the family loved it and requested again soon!
