Linguine with White Clam Sauce I

I really enjoyed this! I did skip the extra 1/4 cup clam juice but I felt the juice from the minced clams was enough. I cheated on the parsley too by using dried, but if you have it, I'm sure fresh would be better. My favorite things about this recipe was how easy it was and that it uses very little oil - so it's not fatty or greasy. I'll definitely make this again.

Mexican Turkey Burgers

We really liked these very flavorful Mexican burgers. Definitely serve them on wraps as the recipe indicates because the texture is too crumbly for a bun - it was a little challenging keeping them together, so I found them a little messy but definitely worth it! We happen to like corn so I used the whole 15 oz can which gives you extra to put on the wrap, but you could either cut that in half or eliminate it entirely. Also I chose to use flavored tortillas (jalapeno/cilantro) instead of plain flour ones for extra kick.

Angel Hair Pasta With Fresh Tomatoes

Delicious! Added extra zucchini and an extra clove of garlic. Processing the basil leaves and garlic in a mini-prep processor made that task really easy.

Eggplant Parmesan II

Excellent; this tastes even better than the fried stuff. I found I needed 2 large eggplants and 4 eggs in my case; and also needed to brown the slices a little more than 5 minutes per side to actually get them 'brown'. Makes GREAT leftovers too.

Better Slow Cooker Robust Chicken

I made a few changes to this recipe and I was so happy with the results, the most important one was thickening the gravy which I thought was too thin by adding cornstarch and water and turning the crock pot on high for a few minutes after the dish was cooked. I used whole chicken breasts instead of cut into strips and they came out so tender. Also nixed the bacon bits. It was VERY delicious, healthy and hearty. I used a little less vinegar than the recipe called for and chose a quality balsamic vinegar. Served over rice, magnifique!

Mama's Ambrosia

Perfect ambrosia in my opinion!! There are many ways to make this - including those recipes that use cool whip instead of sour cream (too sweet for me) - but I made the right choice going with this one, it's just right. I used Fat Free sour cream and enjoyed this as a healthy TREAT.

BBQ Chicken the Old Bay® Way

Excellent. Easy alternative to bottled sauce. Made it two times for three adults and had NONE leftover, so I would double this if you like extra sauce for dipping and really want the six servings it says it makes.

Peking Pork Chops

This made excellent pork chops, I used the thick boneless center cut ones. 5 hours on Low was the perfect cook time; Gets 5 stars for "Easy" just pour all in the crockpot and turn it on. I added an extra clove of garlic, and used low sodium soy sauce which was salty enough. Thanks for sharing, Lynda!!

Curried Carrot Soup

This is so good, I'm really impressed!! I will make it many more times, it was very easy too. The balance of ingredients was perfect, I just added a little more curry...I used 2 knorr Vegetable bouillon cubes and 4 cups of water for the broth. YUMM

Atlantic Corn Chowder

This was very easy and good, but I agree with those who rated it too bland and thin. The bland part is easy to take care of, just be creative with the spices! (I added salt and fresh ground pepper, Old Bay, and some Emeril's "bam" mix which has paprika in it.) I'd make it again because it's so easy and way better and more homemade tasting than heating up a can of soup! Next time, however, I might drain some of the water off the potatoes so it's thicker...that might do it.

Chicken Mole

I really liked this recipe, and my fiance did too even though he won't eat chicken mole in a restaurant! This is different from any that I've had dining out, because it made alot more sauce (which was great with rice). I used skinless chicken breasts and thighs to reduce the fat. This was great and the sauce has just the right "bite" to it, not too spicy or sweet. We had it last night but it was even better today after marinating in the sauce overnight. Does not even taste like there is salsa in it...I will definitely make it again.

Ortega® Chicken Fajitas

This recipe was great, and healthy too. I altered this a little by substituting yellow peppers for the green and adding sliced mushrooms. The sauce never thickened, but I'll probably use a little less water next time. Awesome flavor. I chose to serve this in sun-dried tomato and basil tortillas, which worked well.

Ortega® Black Bean Soup

I loved this soup!! I will definitely be making this again. I think it helped that I used my homemade chicken broth and fresh lime juice in the recipe. It was relatively easy to prepare, my fiance helped and this one will be a regular on our dinner table!! We got creative and added "mix-ins" to the soup, shredded mexican cheese, avocado, and chopped onion. I substituted fat-free sour cream for the yogurt which worked well. One of those recipes that's even BETTER the next day.

Angela's Easy Breaded Chicken

This is a great no-fuss recipe for a quick dinner. It's also healthy. I added parmesan cheese and used fat-free italian dressing. The breadcrumbs were a bit dry after baking, but I fixed that with a spritz cooking oil spray. I will definitely be making these again, especially when cooking time is limited!
