Mushroom Chicken Piccata

Really good and easy! Dredged in flour mixture but did not dip in egg/milk. Cooked in olive oil instead of butter. Delicious!

Juicy Fruit Salad

I used 20 oz canned pineapple, 2 apples, 2-3 oranges, 2 bananas, and strawberries in place of grapes. Refrigerated for a few hours before serving. Huge hit! Everyone went back for seconds.

Banana Muffins II

Delicious and easy! Added some sugared pecan bits and dark chocolate chips. Wonderful! Made 18 regular sized muffins and cooked about 20 minutes.

Donut Muffins

This is a simple and good dish. The nutmeg seemed a little heavy. Used margarine but think butter would have been better. Also, for the dip, ran out of margarine so used an extra 2 Tbsp and it was perfect. Will make it again with some modifications (including maybe trying cinnamon in place of nutmeg).

Mom's Zucchini Bread

SO GOOD! Substituted a little over 3/4 cup applesauce for the eggs and used canola oil. Baked as cupcakes and made 24 regular size plus 6 jumbo (or would make 3 dozen regular). Regular sized ones turned out much better.
