Deep South Eggnog Cake

The cake is kind of coarse and dry, I am not sure what I did wrong. And the frosting is way to soft to keep its shape, it dripped all over. It tasted good, though. Taking into account the amount of butter involved, I am not sure I will be making this cake very often. My youngest son, an eggnog fanatic, loved to lick the leftover frosting.

Chocolate Zucchini Cake III

The most amazing, chocolatey, moist cake I've had in a long time!! I managed to get my finicky father to eat a big piece of it, and he loved it!! To me, it's the only way to use a green zucchini!

Seminary Muffins

my whole family raves about those muffins! The addition of oatmeal brings out an interesting texture. I have used oat or spelt flour to make those, and they turn out good too.

Morning Glory Muffins I

the first time I tried that recipe, I was a bit uncertain: the batter was so thick, and so full of fruits and veggies, I really did not know how they would turn out. But they turned out fan-tas-tic!! My two fussy-eaters, teenage boys are crazy about them! The only change I made was using a whole egg instead of two egg whites. Love them!!

Flourless Chocolate Cake II

Oh, my God!!! I was a bit skeptical about that recipe, I couldn't quite picture in my mind what that cake could taste like, but, wow! it is amazing. I just followed the recipe, and it turned out fantastic. The only thing I would change, next time, is bake it a little bit longer, when it was warmed over for serving, the middle was very soft.

Homemade Black Bean Veggie Burgers

Wow! I was a bit sceptical when I mashed the beans and mixed the rest of the ingredients, but they turned out terrific! To ensure equal portioning, I used 1/2 cup mixture for each patty and had enough leftover for a 5th, smaller patty. They are so good, it was hard to stop at only one.
