Creamed Onions

The end result was delicious, but there's way too much fat in this recipe. A whole cup of butter! I used 1/2 cup of butter and 1/2 cup olive oil. Next time I make it I'll use 1/4 cup of each. Also, I found that 2 teaspoons of flour didn't thicken it much. Even 2 tablespoons didn't make it thick enough for me. I added 1/4 cup of flour. It reheats very well.

Pesto Chicken Florentine

This was a fabulous, easy-to-make chicken dish. I'm always looking for something new in the way of chicken recipes because my family only eats fish and fowl. This one is a keeper. Just one note, next time I will add the whole package of fresh spinach. Two cups cooks down to so little.

Roasted Pork Loin

This is an easy and fabulous recipe. However, 2 hours at 350 is way too long to cook a 2 pound roast. I baked it at 325 for 1.5 hours and it came out moist and delicious. I used a whole can of beef broth instead of wine and I added it from the start instead of at the end.

Awesome and Easy Creamy Corn Casserole

I recently made this recipe and doubled it. Ten people tried it for the first time and all wanted the recipe. It's VERY easy and VERY delicious! It reheats very well and freezes well too! Awesome!

Pumpkin Crisp

This recipe is delicious! I added a 1/2 cup of chopped walnuts to the topping. The topping was very wet so I added about 1/3 cup of flour to make it crumbly. Rave reviews from family and friends, but if sugar and fat calories are a concern, this recipe is not for you.

Coffee Roast

It sounds weird to put coffee in a potroast, but this is absolutely delicious! And what a nice, rich gravy. I didn't tell my family what was in it until after they ate it, but they loved it!
