Different Chicken Cordon Bleu

This was even more excellent than I knew it would be!! The whole family loved it. I didn't have swiss cheese, so I used monterey jack, and I sliced each breast in half lengthwise and then rolled a piece of ham around each piece, laid them in the 9x13, then followed the recipe as is. I used chicken broth instead of wine only because we didn't have wine. I crushed my stuffing mix in the bag before sprinkling it on, then I drizzed 1/4 cup of melted butter over it all before baking. It took about an hour to bake it, and I let it sit about 20 minutes before we ate to let it "settle" a bit. SO YUMMY!! All 3 of my normal picky-eaters asked for seconds.

Carrot Muffins

Very tasty! Not too sweet. Nice texture. I followed the recipe exactly, except I added the carrots to the wet mixture not the dry as I didn't want them to turn green from the baking powder (not sure if they really do, but I've heard this before). I made one loaf and 12 muffins, and increased the loaf time by 8-10 minutes from the muffins. Will make these again, maybe with a bit more brown sugar as we like a sweeter muffin, but overall very happy with them!

Zucchini Brownies

I was skeptical because of the dry consistency of the batter prior to adding the zucchini, and the omission of any eggs, but these were hands-down the best use of my shredded zucchini that I have ever made! I didn't add any icing either, because they are good and healthier without, but I'm sure that would only add to their yumminess! The nice thing is you can't see the zucchini in them, so the kids don't even know they are eating "the green stuff"!!

Spring Vegetable Bundles

These were a LOT of work, but very worth the effort! I got rave reviews from my dinner guests, and it was very convenient that they can be assembled early in the day and then the cooking is very simple right before you eat. One tip--do not overboil the green onion tops, this makes it very hard to tie them into knots. And I found 7 inch pieces were not quite long enough.

Lion House Wassail

This has been a hit every time I make it. I skip the orange juice and use half the lemon juice and add 4 cups of cranberry raspberry cocktail instead. I use a little less of everything to fit it in my large crockpot and I just pour the sugar/spice syrup in there and then add all the other juices and a little water to make it less potent. Then I float some cinnamon sticks and orange and lemon slices in it to make it look festive!

Mother's Applesauce Cake

This was really good cake--darker and spicier than I expected, but very moist and quite addictive. I skipped the icing but I think it would taste even better with a citrus-y frosting on it.

Apple Maple Crumble Pie

This recipe was better than my favorite standard apple crisp, which was hard to beat! I added cranberries and raisins, and tossed the apples in a tbsp of lemon juice, added the cinnamon and nutmeg to the topping that others suggested, and used blueberry flavoured maple syrup and it was amazing! The crunchy topping was such a delightful change from regular crisp recipes. Thank you!

Chicken Satay

Excellent thai taste! I LOVE peanut sauces and this one tops my list. I adjusted some of the measurements--more peanut butter, less of everything else. I only marinated for 45 minutes, and it still tasted great. Served it with a homemade peanut dipping sauce. Can't wait to make it again.

Garlic Bubble Ring

Very tasty!! I love having fresh bread with dinner, and this recipe hit the spot! Crunchy on the outside, and soft on the inside, with a yummy garlic flavour. Next time I might even sprinkle some shredded cheddar in the last baking moments. Yum!

White Chocolate Raspberry Cheesecake

Absolutely decandent! I was looking for a recipe exactly like this and I'm so glad I found it here. I knew it would take some time to prepare it, but it was completely worth the effort. I have made it twice and received rave reviews both times. I made a white chocolate sauce to add to it, along with white chocolate shavings, which was also nice. One of the best cheesecakes I've ever had. Thank you!

Bacon and Cheddar Stuffed Mushrooms
