Old Fashioned Raisin Pie I

To be fair, this is the first raisin pie I've tried. Maybe we just don't like raisin pie. It tasted like raisins in a crust--nothing special or spectacular. I won't make this recipe again.

Fruit and Cream Phyllo Pie

My hubby and one son gave this recipe a seven out of ten, and one son couldn't bring himself to try it. I thought it was very good, and I think I'll try it again with berries instead of apples.

Insanely Easy Vegetarian Chili

It's true, this chili was easy to make, but I didn't like it. My easy-to-please family didn't like it either. I've had vegetarian chili that tasted much better than this!

Marrakesh Vegetable Curry

Fabulous recipe! I served this curry over Coconut Rice (from this website) and made it for a group. Raves all around from my young kids, my husband, our friends and even their teenagers. This is a new favorite--thank you for this recipe!

LOVE this recipe! Love it even more that it doesn't include raw eggs! My husband has experimented with this as the basic recipe and added other flavors. His favorite--anise flavor with black food color! Great as just vanilla or as a base for other flavors!

Black Bean and Corn Salad II

Great bean salad! I added much more lime juice, more garlic, a bit more salt and reduced the oil. Plus, I did equal amounts of corn and beans. Also, to avoid "mushiness", I added the tomato and avacado very last, after mixing the dressing in with the other ingredients. I gave it one last toss just before serving to coat the avacado and tomato. Very good!

Chocolate Zucchini Bread I

Very good! I have made this a few times with great results, but I didn't use unsweetened chocolate squares. I substituted 3 Tab. cocoa, 2 tsp. sugar and 1 Tab. oil for one ounce of chocolate (so for this recipe, you double that formula), and it worked out fine. Also, I used the suggestion of one of the reviewers to fold in the zucchini last, and the chocolate chips didn't all sink to the bottom. Love this recipe! Definitely a keeper!

Ricotta Cheese Cookies

Great use for leftover ricotta. Definitely use lemon or almond flavoring with or instead of vanilla. Very moist cookie--not too sweet.
