Butter Pecan Bars

I made this in a larger pan, because others complained about it not cooking well enough. I ended up overbaking it so it didn't turn out well, which is my fault. Regardless of that, the flavor was pretty good, they tasted like pecan pie; but they didn't have the jellyish texture of pecan pie that I like so much, so I doubt I'll make these again.

Salmon with Brown Sugar and Bourbon Glaze

This came out great. It has inspired me to try various other simple butter/alcohol/sweetener sauces on fish, and many of them are very good. I suggest experimenting with various combinations. One that has come out well for me after a little tuning is using honey and amaretto with some mustard also.

Butterscotch Gingerbread Cookies

I didn't find these cookies particularly special. They weren't bad, but not really noteworthy either. And not the best gingerbread I've had. For some of the cookies, the butterscotch chips melted and formed an unwanted crusty bottom on the cookie. Not a bad cookie overall, but I doubt I'll try it again. I may try throwing in butterscotch chips into another gingerbread recipe.

Chocolate Peanut Butter Squares

These came out really rich, but also really good. I really liked them, but you can't eat too many of them, you'll get sick of them because they're so rich... just look at how much butter goes into it! I tried subbing in 1/2 cup Reese's peanut butter chips for 1/2 a cup of the peanut butter, but I couldn't tell that they were in there. I also didn't completely pulverize the graham crackers (because I did it by hand with a wooden spoon), so there were some nice crunchy bits in it. Goes really well with ice cream. The next time I'm going to make it more chocolatey (probably by making less peanut butter portion), because the peanut butter portion mostly overwhelms the chocolate.

Jam Filled Butter Cookies

These turned out great. I gave most of them away and people wanted to be taught how to make these. Nice and buttery and sweet. The recipe it makes 36, but I only got 24, but maybe I like my cookies big. I found that 375 was too hot, baking at 350 for 9 minutes on the top rack worked for me. But everyone's oven is different. I tried four flavors: strawberry, blackberry, apricot, and marmalade. They were all great. Highly recommend.
