Glazed English Toffee Cake

Easy, but somewhat time consuming. It is worth it though! I made it for valentine's day earlier this year, to the total amazement of boyfriend! It was a hit! My roomates came drifting into the kitchen, asking "what's that smell?" Your family will too, trust me!

Spicy Oven Fried Chicken

This recipe is sooooo good. Only problem is you have to plan ahead the night before so you can soak the chicken. But it is definitely a hit here! Whenever I ask my boyfriend for dinner requests he always says "make the chicken

Pan Fried Catfish Filets

I really like this recipe, never made catfish before, but it came out great.. I used a more flavor neutral vegetable oil instead of olive, and I also added more cayenne because I'm from the South and love spicy food. I probably added an extra 1/2 tsp, but next time I think I'll add more. Also, maybe my filets were thin, but I didn't need to cook them as long as the recipe called for, a minute or two less on each side actually.

Spicy Grilled Shrimp

One word: WOW! I also cut down on the salt, added more cayenne and uped the garlic. I also marinated it for about 30 minutes then put them on my george foreman grill for about four minutes. EXCELLENT!

Six Can Chicken Tortilla Soup

This recipe is excellent and SO easy! You can't go wrong with this! I live in a region where Tex-Mex food is on every corner, and this satisfies my discriminating taste buds. Here's are some serving ideas: You MUST serve this with tortilla chips and shredded cheese- this is not an option! It's good also with: avocado, onion, cilantro, jalapeno, bell peppers, garlic, cumin, cayenne, lime wedges ... the possibilities are endless! Another thing I did to make sure I had enough food for everyone was to add a can of plain tomato sauce.

Chocolate Cookie Mix in a Jar

I've made this a few times as gifts and they're always a hit. I would agree that the layering needs to be changed. I started with the flour mixture on the bottom and then alternated dark and light. I also used peanutbutter chips in exchange for the nuts, because you never know who doesn't like them. A good idea for a gift is to make a batch of the cookies to give with the cookie mix in a jar. It's immediate gratification and they will know what their batch will taste like!

My Best Clam Chowder

This is a really quick and easy weeknight dinner dish. It wasn't as thick as I normally like my clam chowder to be, and it could use something extra to give it more substance, maybe more clams or potatoes. I will definitely make this again.

Ham and Cheese Quiche

I used this recipe for a baby shower and it came out great! Everyone was asking for the recipe. It's so quick and easy too, especially if you buy Swiss cheese and Cheddar cheese that is already sliced and shredded. A cute idea for gatherings is to make miniature pies for everyone. One 9" pie recipe is equivilant to about 12 miniature pies. I baked 24 miniature pies for 45 minutes and they came out perfect. This recipe is a real winner, and I know I'll keep making it for years to come!
