About this Cook
I am a wife and mother of 2 wonderful boyz. I grew up in Northern CA and love the Bay Area. I have lived in Dallas/Ft Worth TX for 2 1/2 yrs and made some wonderful friends. I now live in Southern CA. I love to read, martial arts, run, bike ride, walk, listen to my iPod, and relax.
My favorite things to cook
I love Mexican food. I also love to cook with my slow cooker or dutch oven. I am a busy Mom, so I don't often have time to cook anything fancy, but I do like to cook with as little processed food as possible. We eat fresh fruits and veggies, and a lot of chicken.
My cooking triumphs
I started off baking as a kid. As I got older, I expanded my cooking range. My Mom was a single parent and relied on me to start dinner for me and my sister. My Mom cooked what was easy and inexpensive. I guess I experimented on my own and became the cook I am because of it. So I guess I am self taught. I like to experiment and try new recipies and most of the time, they come out pretty good. My boys and DH LOVE fresh veggies and salads, so I think I have started them off right with their diet. I consider that my greatest triumph.
My cooking tragedies
Learning to cook on my "fancy" expensive grill has been a challenge. I am just learning the hot spots and timing issues with it. I have burned more than I care to admit.

Sangria! Sangria!
Have made this several times and it is delicious. My girlfriends ask me to bring it to our Girl's Nite Out. To be honest, it tastes better than the sangria that I've had in Spain (too diluted). This recipe is stronger, and we like it that way!

Roasted Swiss Chard with Feta
I've never had Swiss Chard before, so decided to try this. What a nice surprise! I substituted parmesan for feta because of my boys preference, added a splash of balsamic vinegar, and cut the olive oil in half. My 16 yr old son really like the leaves, but not the stems, and my 10 yr old son said "yeah, its okay". I loved it! Just waiting for my husband to try when he gets home from work.

Potato Leek Soup I
Really liked this a lot! I omitted the butter and put 1/4c olive oil instead. I also added only 1/4 c half and half. I don't miss all the heavy cream of the "creamer" versions. Still lower in calories. Will make again.
