Baked Ziti I

This was delicious and easy. I had never made baked ziti before so was a bit nervous when making for guests for the first time. I made a double batch and was impressed with how easy it truly was. I did make one minor adjustment per several reviews- instead of the 1 1/2 cups of sour cream, I used 3/4 cup sour cream and 3/4 cup ricotta for each batch. While I'm sure the recipe as stated would have yield excellent results, I know I will continue with the sour cream/ricotta mixture in the future. The ricotta gave a nice taste and texture while the sour cream added a lovely, mild zip. Oh, and I chopped up some garlic and added it to the onion and beef while browning. I covered the dish with aluminum foil and baked for 25 minutes then removed the foil for an additional 10 minutes of baking time. Served with an arugula salad with lemon vinaigrette and garlic bread. Perfection. Best part- I have some leftovers for another meal. Mmmmmm. Thanks for the outstanding recipe.

Chicken Enchilada Soup III

This was so easy and so delicious. It was a warm bowl of comfort. I will definitely make it again, though I may make an addition or two just for fun (totally not necessary). We thought green chilies and maybe corn could be good as well. Perfect as is. Thank you! This will be a new staple in our home. p.s. I'm not sure what the fuss was in some reviews with the masa harina. It's almost as easy as adding water to a recipe.

Parmesan Crusted Chicken

Yum! This was sooooo easy and very tasty. My 1 and 4 year olds loved this chicken. I couldn't get enough. I rolled the chicken in the mixture (lightmayo, parmesan). I added garlic powder, sea salt, pepper, dried basil and dried oregeno to my plain bread crumbs then sprinkled it over the chicken. 20 minutes at 425 was spot on, but I left it in a few minutes longer because I'm so afraid of undercooked chicken. I think it was fine at 20 minutes though. I will be making this for my family again and again. Thank you for a GREAT recipe that takes no time to whip up.

Soft Oatmeal Cookies

These were okay. Very dry. I added raisons which helped make each bite a bit more moist. There are definitely better recipes out there. Maybe another egg would help???

Pumpkin Bread IV

I had never made pumpkin bread before this. This recipe is superb. My whole family loves this bread- including my 1 and 4 year olds. There were two slight changes that I made: I didn't have cloves so I used a teaspoon of Allspice; and I used and entire 29 ounce can of pumkin which ended up being just slightly over 3 cups. I got 3 loaves out of this recipe. It's almost cake-like. My son tried a bit of whipped cream on his and thought it was tasty. It was perfection on its own though. This will be a new Fall staple in my house. Absolutely amazing bread.

Chicken Breasts Pierre

Delicious! So different, yet so tasty. My husband actually said HE wanted to learn how to make this since he liked it so much. Followed the recipe with the exception of the celery seed- I didn't have any. Also, per another reviewer's recommendation, I cut back slightly on the chili powder. I will defnitely make this again, but I will cut back on the chili powder. I believe 1 teaspoon would be plenty. Oh, and I didn't have hot sauce so I used a small pinch of cayanne. What a wonderful and unexpected recipe. Thank you!

Chicken with Lemon Sauce

This was a fairly easy and tasty recipe. I followed the recipe exactly (which is rare for me) and it turned out great. Even my 3-year-old ate it and really enjoyed it. This is a big deal for us! I will definitely be making this again soon. Thanks for the great dinner recipe!

Slow Cooker Beef Stew I

This is a great recipe. I tried it last week and thought the meal was good. I altered it slightly this week and thought it was outstanding. With the alterations I now give it 5 stars. Here's what I did: After tossing the beef in flour to coat I browned the beef in a skillet. I added the onions to soften. I then added half a cup of red wine to deglaze. I threw it all in the slow cooker after that and followed the recipe as written with one minor adjustment- I added a hearty tablespoon of Worcestshire sauce. With these minor changes, the stew had a much greater depth of flavor. I think the key was to brown the meat first and also add the wine. Thanks for the great base recipe and for all of the user review suggestions. This stew is simply perfection!
