Amazing Pecan Coffee Cake

Great texture overall! Crunchy on the outside and soft and chewy in the middle. Tasted it right out of the oven, and I just wanted to devour the whole pan. Tastes good warm with a nice glass of milk.

Taco Tidbits

Didn't have taco seasoning, so I threw my own spices together instead (Oregano, basil, paprika, cajun spice). Had to add a little more butter after doubling the recipe, but they were a hit with our friends! They don't last more than a day or two before they get soggy or stale.

Meringue Teasers

LOVE these...if they turn out. It's about a 50/50 chance that they turn out like meringues or if they are a puddle of goo. Be warned: Cannot make them when it snows or there is high humidity in the air. When the weather is right, they turn out great, and are simple to make and taste so light and so flavorful!

Pumpkin Cheese Ball

I doubled the recipe and it was enough to make 3 nicely sized cheeseballs. I took one portion out before adding in the beef so that our vegetarian friends could have one too. This one had more of an issue holding its shape at first. So I put it in the freezer for a while, making sure not to freeze it completely. This helped hold the shape a lot. It was a great appetizer for our pumpkin dinner, but it was a little bland. I was hesitant on adding in the raw onion (thinking it would be too potent) but it still was not flavorful enough. It is a good baseline recipe that I will use in the future, but I will experiment with spices next time.
