Basil Pork Chops

This was a winner! I omitted the salt and added Thai Chili sauce in place of chili powder to give it a sweet kick and it really worked well! Even the kids liked it!

Slow Cooker Pulled Pork

I used the tenderloin and slow-cooked it on low for 10 hours because of work and school. It was great! I used Sweet Baby Ray's BBQ Sauce. I had homemade sweet potatoe fries and steamed fresh green beans as sides and we had a great meal.

Chicken Enchilada Soup III

My family loved this recipe. I added 1/3 pound of extra chicken to give it more substance and it worked out great. Next time I would half the chili powder for my husband's sensitive stomach (although I loved the amount of spice).

Jamie's Cranberry Spinach Salad

I love, love, love this recipe and have used it for years. I recommend cutting the sugar in half. I use it pretty much as is in the fall and winter. In the spring and summer I switch out the cranberries for fresh berries and mandarin oranges (I have also used fresh pineapple),switch out the almonds for pecans, and romaine and spring mix for the spinach (don't forget to keep the sesame seeds). It is fantastic! You can make the dressing and toast the nuts and seeds the day before.

Easy Four Cheese Lasagna

This is very easy and very good. It was a great recipe for my first try at lasagna. My husband loves it. I doctored up the store boughten sauce with oregano, fresh basil leaves, and three cloves of minced garlic in a blender. It adds a little kick to the dish, makes it more interesting. I also found that using the cook-it yourself lasagna noodles was better than the pre-cooked lasagna noodles. Great recipe!
