Easy Butter Fingers Candy

These taste like a fudge form of the candy bar. Awesome! I doubled the amount of chocolate. 6 oz is not enough at all. I did good with the 12 oz bag of chocolate chips and did add the shortening which helped the chocolate spread easier.

Cherry Tomato Salad

Wonderful and easy to eat! I increased the dressing by half since I also added shredded iceberg lettuce and feta cheese on top...and put a few extra olives and tomatoes in. Next time I will decrease the olive oil and add a little extra red wine vinegar. Overall, this was very tasty and easy.

Sausage, Beef and Bean Casserole

Excellent! Wonderful, unique flavor. Easy to make. I increased the sauce and the stuffing mixture as we were not serving the casserole with any bread, pasta or rice. I also added mushrooms. Everyone was impressed with this different but tasty recipe!

Coconut Cake III

The cake itself is amazing! I substituted macadamia nuts for walnuts. The frosting was barely enough for a two layer cake, so I would recommend increasing the frosting by half. Also, the cream cheese flavoring was muted. I would increase the cream cheese next time as well. However, even though the frosting needed tweaking, the cake is worth more than 5 stars!

Cheesy Sausage Zucchini Casserole

I thought the base for this recipe was great. I wanted to use up some zucchini and squash I had and wanted a hearty recipe (no way I was going to eat them plain). Some changes: tripled the amount of rice (may have been a tad too much) used about 2 minced cloves of garlic instead of onion, used turkey kielbasa instead of ground sausage, shredded mild cheddar instead of processed cheese, doubled the mushrooms (I love them!) and used a can of diced tomatoes (with juice) instead of fresh tomatoes. I really liked it, especially the flavor pop of the tomatoes. ETA: The oregeno is key to this tasting great. I definitely put more than a pinch in!

Olive Pecan Spread

I picked this recipe out for an appetizer before a torta rustica I was making (which took an incredible amount of time to make). This FAR outshined the main dish of the torta rustica. It is very addictive and so easy to make. I buy the already chopped olives and pecans, which then takes me all of 2 minutes to put this recipe together. I would definitely serve with a harder type of cracker (one that doesn't break easily).

Pina Colada Cake II

I LOVE this cake. When I first came across this recipe I had been looking for a cake I thought my son would enjoy...didn't really appeal to me too much. Made it and fell in love (and he didn't even want to try it). I make this recipe exactly as written except I toast the coconut. So easy and so delicious!

Make-Ahead Vegetarian Moroccan Stew

This was fantastic. I left out the dried apricots and lentils as I was trying to keep the shopping list short and I'm not crazy about them anyways. Also, I used spinach instead of kale. Other than that, made exactly as is. The spices were perfect for me. Definitely tasted them without being overpowering. This will be nice in the winter when I want comfort food without the cream, cheese and other fattening ingredients.
