Bacon Ranch Chicken Skewers

I didn't have ranch dressing so I used the Dry Ranch Style Seasoning for Dip recipe (here on AR) and sprinkled that all over the chicken. I've made them straight after seasoning and also letting them set for a few hours. Great both ways. I couldn't picture how to do the bacon, so the video was very helpful. This has become a must-have when we have friends over, they all ask for it.

Marinade for Chicken

Quick and Easy Brownies

The first time I made this I cut back on the cocoa because most brownies are too chocolatey for my tastes. Mistake! The cocoa taste barely came through. I made it again with the correct amount and they are perfect. If you like things really chocolatey, I'd add some chunks of chocolate to the batter. I freeze this batter in two 8x8 pans. I bake from frozen and add about 8-10 minutes onto the cooking time. I love having a pan in the freezer for last-minute potlucks, etc.

Sarah's Rice Pilaf

Great recipe! The only change I'll make is to cut back on the amount of onion. We really like onion but I thought the flavor was a bit overpowering compared to the garlic. I've been looking for a homemade pilaf that was comparable to the Near East brand that I buy and this is pretty close. Thanks!

Oatmeal Peanut Butter Cookies

Excellent!! The balance of flavors is just right. I think these are a little on the sweet side so next time I make them, I will cut back on the sugar (probably 3/4 c. for brown sugar OR 1/2 cup for white sugar). I freeze the balls of cookie dough in a freezer bag. To cook, I add 2-3 minutes onto the cooking time and bake from frozen.

Bacon-Roasted Chicken with Potatoes

This was a real hit for my family (including 5 & 2yo). I was a little nervous because the seasoning mix seemed like an odd combination, esp. once the bacon was added. I am SO glad I tried this though!! I used bone-in chicken breasts and less cooking time (40ish minutes). Next time I will put some of the seasoning mix directly onto the chicken and let it sit for a couple hours before cooking--the very top of the chicken had good flavor but it didn't extend very far down.

Iced Cinnamon Biscuits

The flavor of these is pretty good. Not too heavy on the cinnamon. But I found them a little dry though that may have been my fault. I'll definitely try again.

Breadsticks with Parmesan Butter

Very good flavor. I was looking for a more chewy breadstick recipe to go with pizza. This one doesn't fit that bill, unfortunately. But we really liked the recipe for what it is.

Oven Brown Rice

We really liked the flavor but, as written, we found it too salty. Using low-sodium broth plus garlic powder (instead of garlic salt) made it more palatable.

Peanut Butter Mini Muffins

As written, I think this recipe is a 4-star. After doing a second batch with modifications, I'd rate that a 5. I went with another reviewer's suggestions and changed to 1 cup milk, 1/3 cup oil and 1 1/2 cups flour. Next time I think I'll go back to 1/4 cup oil though. I used a mixture of peanut butter chips and PB/chocolate swirl chips. The additional PB & chips gave it a nicer PB flavor but without it being too overwhelming.

Honey Roasted Red Potatoes

Excellent! I took suggestions of other reviewers to 1) double the amount of sauce 2) add a little extra onion & dry mustard and 3) cut into smaller pieces (depending on the size). I reserved half the sauce and added it in the last 10 minutes.

A Good Easy Garlic Chicken

We liked this recipe but we'll tweak it when I make it again. I used the gravy recipe per GIAMOM's review and that helped. I'll probably do 1.5 or maybe 2x the amt. of spices next time. And/or rub the spices on the chicken earlier in the day so it can season up.

Butter Crescents

These are a decent roll. Not too heavy. I usually substitute 1/2-1 cup whole wheat flour for the AP flour. I use some extra butter including spreading melted butter on the triangles as I roll and kneading in some extra butter into the dough. Still, I wouldn't call these buttery.

Pizza Dough I

We enjoy this recipe and use it but we don't *love* it. It is a very easy recipe. I can make it right before dinner or make it in the morning and leave it until dinner (if I'll be out all day). We usually make it as a deep-dish style pizza (as another reviewer suggested), so I pre-bake the crust for about 5 minutes before adding toppings. I find the crust gets done better that way.

Delilah's Frosted Cut-Out Sugar Cookies

I made this recipe a few days ago and it was a big hit. I needed more flour than the recipe called for (about 2 3/4 cups). I rolled it out in part flour & part confectioner's sugar (I was afraid they'd be too flour-y). I tried one w/o the icing--definitely benefits from the icing! It didn't take much milk (about 1 T) to get it to a pipeable consistency.
