City Chicken

Reviewed: Oct. 8, 2002
I love this recipe. So simple and tasty. Have made it several times now, all to rave reviews from hubby. I don't bother with the skewers, just brown the pork and add the broth. Makes it more like a stew.

French Onion Casserole

Reviewed: Aug. 5, 2002
I have a very similar recipe called Dirty Rice Casserole. It calls for the addition of 2 tsp. minced garlic and Tabasco sauce to taste. I don't brown the meat first, but do find that after about one hour in the oven it is necessary to stir the casserole to break up the ground meat and ensure even cooking. Bake for 1/2 hour more and you have a super-easy meal.

Banana Pudding Cake

Reviewed: Jun. 28, 2002
Tried this cake for my sister's birthday. It was a HUGE hit! Instead of the glaze, I thinned cream cheese icing with a little milk and drizzled over the cake. Very light cake with a luscious banana flavor, and super easy to make.Had two requests for the recipe. Will certainly make again!

Creamed Peas and Onions

Reviewed: Jun. 10, 2002
This has been one of my family's favorite dishes for years with one variation. Try frying 4 slices of bacon until crisp. Drain and set aside. Make the light roux with 4T bacon drippings instead of the butter. Season with Creole seasoning to taste and crumble bacon into finished dish. There are never any leftovers and even pea-haters love this.

Dev's Dorm Room Casserole

Reviewed: Jun. 9, 2002
I forwarded this recipe to my 19 yr. old daughter. It's her first year in college and she only has access to a microwave in her dorm. She hasn't stopped raving about it since she tried it. Very easy, very inexpensive, and very tasty. Thanks Dev, she loves it!
