Sean's Falafel and Cucumber Sauce

This was a really great recipe! I was looking for a good falafel recipe after having some while I was at a festival, and they were exceedingly dry, leaving me with a craving for a good falafel. I used dry parsley, simply because that's what I had, and halved the amount of cumin because I was worried about too strong of a cumin flavour, but next time I would definitely put the full amount in. I would like to try baking them as well, to reduce the fat.

Watermelon Summer Salad

I had a version of this salad 5 or 6 years ago, and had searched for a recipe at the time, but alas, there was none to be found here. Then I saw it made on a cooking show on tv recently, and went looking again, and low and behold - there was now a recipe! I make it without the olives since I hate olives, and I think it's great. The only thing is that I find it does not keep well, as it gets really watery the longer it sits - only make what you will eat, and prepare it as close to serving time as possible.

Yogurt Chocolate Chip Cookies

These were excellent cookies. I thought the yogurt might add a slight tangy flavour, but they taste just like good ol' chocolate chip cookies. I only had vanilla flavoured non-fat yogurt, so I reduced the vanilla to 1 tsp. I used a mix of semi-sweet and white chocolate chips, substituted half the flour with whole wheat flour, and used all butter instead of shortening (like previous reviews suggested, and because I didn't have any on hand!). I like that they don't use eggs, as I rarely have them on hand, but always have yogurt hanging around.

Portobello Mushroom Stroganoff

This was pretty good, but I found it really rich! I used beef broth simply because I had some in the fridge I needed to use up, and added a tbsp of worcestershire sauce and some soy sauce per other reviewers. I would suggest not cooking your egg noodles so soon, as mine were done way too early, and got a bit too cold and stuck together by the time I was done the stroganoff.

Slow Cooker Thai Pork with Rice

Texas Chicken Quesadillas

I can't believe I haven't reviewed this recipe til now! I've been using it for awhile, and it was a definite hit with the entire family. We add red or yellow bell peppers in with the onions, and make them on whole wheat tortillas, and serve with sour cream, refried beans, and salsa. One quesadilla makes for a filling meal! My sister always requests I make them when I visit home.

Grilled Onions

I'd say these were pretty good - I used a reduced salt chicken boullion, so it wasn't too salty for my taste. I made them in the oven, but I don't think I cooked them long enough, or at a high enough temperature, as they were a little underdone after an hour of cooking. I think the recipe would be really easy to modify for different spice combinations.

Ultimate Irresistible Granola

Tuna Salad with Cranberries

This is quite tasty, and a nice change from the regular tuna sandwich. I like the dill and the cranberries together. I put mine on some crispbread, with some dill pickle relish and topped with a bit of grated cheddar.

Moroccan-Style Stuffed Acorn Squash

Very tasty - I reduced the amount of cumin because I don't like a strong cumin flavour, and added some cinnamon to the mix. I also sprinkled a little extra brown sugar and cinnamon on top of the stuffed squash before serving. Went well with my grilled prawns and asparagus. I'm also enjoying some leftover stuffing today at work. Great alternative from our normal way of preparing squash.

Goat Cheese and Spinach Turkey Burgers

These burgers are really moist and tasty. I couldn't get any ground turkey at the store, so I used ground chicken. I also had garlic & herb goat cheese on hand, so I threw that in. Dressed up with some mayo, mustard, lettuce, pickles, and red onion on a bun - made for a great dinner!

Attitude Chicken

okay, I didn't quite have all the ingredients for this to make it - I had to sub in cream of mushroom soup for the cream of chicken, and we didn't have any broccoli, so I used spinach instead. I only used about half the lemon juice in the recipe, and I must say, that was definately enough for my liking, and I love lemon! Using the whole amount would be over kill. The dish was okay, not something that I would be in a rush to make again. I think I was expecting something creamier - not what I was looking for.

Sweet and Tart Strawberry Salad

I made this salad for easter dinner, as we had a bunch of strawberries and didn't want them to go to waste - it was quite good. I must say, if you do make it, don't make it ahead of time and let it sit before you serve it, otherwise you lose the flavour of the balsamic vinegar. I noticed when I made it you could taste it, and it was a nice combination, but by the time we actually served dinner (an hour later), it just tasted like sweet strawberries. Give it a go, just serve it right away!

Rhubarb Bread I

This was great bread. I love rhubarb, and we have a plant in the backyard. I was bored this evening, so I decided to harvest it, and make this bread. It turned out really moist, and really tasty. I left the walnuts out as I don't really like them, and added a little extra rhubarb, and it was still really flavourful. I love the sourness of the rhubard with the sweetness of the bread. It's a good thing it makes 2 loaves because the 1st on is almost all gone! I think it would be great if some strawberries were added as well.

Margarita Party Pie

I thought this was a great recipe! I made it for a bbq this weekend, and everyone liked it, execpt for the one 16 year old that was there - they just thought it was too "alcohol-y" for them. I think the pretzel crust was surprisingly good. If I were making it where there were going to be alot of kids, I would half the tequila, or omit it all together, and use orange juice or more lime juice. But for me, it was perfect!

Tropical Salad with Pineapple Vinaigrette

This was a really tastey, light, and easy salad to make. I'm always looking for more salad recipes that encorporate fruit and greens. Everyone liked it. I had some butter lettuce, and baby spinach on hand, so I mixed that in with the romaine lettuce, and it made for a nice salad mix. Makes a bit too much dressing for the size of the salad, but there was absolutely nothing wrong with the taste! It will be something I make again.
